Oatmeal, Raisin, Walnut Biscuits

It's been ages since my last cooking or baking post, so it's time for a new one. This time I'm going to show you a healthy biscuit recipe that I had my eye on for some time. I like these cookies because these are not only healthier but also last longer.

These biscuits can be kept for a week or even longer, you can transport them without any problems and you can't eat more than one or two at once. Oatmeal's GI (glycemic index) is low, you can use these cookies like energy bars as well because mine has raisins and walnuts. It's the best sweet you can have.

So far I've managed to collect a few recipes, but today I chose one from the internet, the first that I came across of, this one. As usual, I changed the recipe a bit, but don't regret it as the biscuits are heavenly good. I should also tell you that I doubled the quantities.

Ingredients:

  • 250g unsalted butter,
  • 250g sugar,
  • 2 eggs,
  • 2 packets of vanilla sugar,
  • 250g oatmeal,
  • 300g all purpose flour,
  • 10g baking powder,
  • 200g raising (soaked in rum),
  • 200g walnuts.
  • pinch of salt. source

Method

The method is very simple. Beat the room temperature butter with sugar. Add the eggs and beat for a few minutes. Then add the dry ingredients, mix well. At the end, add the raisins and grounded walnuts.

The recipe says use a spoon and place small quantities on the baking tray, but I used my hands to form ball like pieces, of the size a ping-pong ball. Trust me, it's totally doable. In this case shape does not rally matter, most of the oat biscuits you see online are flat and not regular. It is normal as with chopped walnuts and raisins, you can't expect much. However, I was quite satisfied with the outcome. I did not want big biscuits, so I chose the size of a ping-pong ball.

Looking at now, from a distance, I think I did a decent job. I'm not saying they are of a similar size, but there are no huge slippages.

The recipe says 15 minutes at 180°C but I needed much more, like 35 minutes. I don't like half baked things, just because someone on the internet says 15 minutes. In any case, bake till it's golden brown. If you see they are too dark, reduce the heat to 150°C. I got 60 biscuits, which is plenty.

The original recipe is with chocolate, which is a good choice. I did not have chocolate but did not want chocolate either as it makes the biscuits even more sweeter, unless you use 70 - 80% cocoa chocolate. I wanted sour, that's why I used raisins. You can also use almond, cranberries, blueberries, almonds, hazelnuts, cashews, you name it.

I think my search for the perfect oatmeal biscuit recipe is ending here. I love this one as it is, there's no need for a better one, I'm keeping this one. Good thing Hive serves as my online recipe book.

So check this out, same recipe, but the baking time was different.
First time I left them in the oven for abourmt 25 minutes, maybe even more.
And today I left them only 15-18 minutes. They are much better this time. They are much softer and chewies. Cripsy on the outside and soft on the inside.

I remembered last week when I tried the other recipe, the peanut butter cookies, that it was mentioned to not keep them in the oven until they are like 100%. Better to take them out when they're 80-90% cause they will bake at room temperature with that inner high temperature they have.

About baking time, that's up to you, as you like it. I left it in for longer and was pleased with the result as it was crispy on the outside and perfect on the inside. I like mine a bit mire dry. Dunno why 🙂

We're soo bad, especially me. I havent been so sick in years, except when I got covid last year (in vacation). 🙄🙄😪😪😪🤣

I also like the cruchy texture more. Compared with the previous batch, those were more cruncy. And I think I might like those more. But these are great too. I think I'm ok with whatever. 🤣 they are delicious anyway. 😁

I'm lucky as the last cold I got was when I registered on Hive (5 years ago 😂) then last year in August I had covid, but was a very mild form, I wasn't sick at all.

Like another source of income. Bakery in my country makes alot of money because everyday people eat bread, biscuit. It's a nice one(just saying tho)

The problem with this is that a bakery in your country is not the same as a bakery in my country. To start a bakery you would need at least $100k investment. Rent a proper place that can be authorized for the activity, buy equipment and proper furniture, hire personnel, get the necessary licenses, buy raw material and so on. And even so you would be eaten by the competition which is fierce already. There are so many bakery chains you would not last a single month.

I understand tho. Starting a bakery here isn't easy too but I think you can start manually before buying those expensive equipment

Realmente cualquiera de las fotos es digna de aparecer en un empaque de estas galletas, son fotos fantasticas. Tristemente no me gustan las pasas de uva pero todo puede solucionarse con un poco de chocolate jajaja.

Lol, your comment made me laugh indeed. Raisins are dried grapes, I think you need special grapes for making raisins, but they are still grapes 😂
At the bottom of my post I am usually offering alternatives as I know not everyone like the ingredients. You can substitute raisins with a lot of things and tailor the recipe as you like. My niece doesn't like raisins either, so I need to be creative.

Those cookies look delicious! Oatmeals are surely a good thing to use as an ingredient. Not only it is healthy, but as you've mentioned, it last longer. Although I must say that not everyone appreciates oatmeal. I, on the other hand, make oatmeal pancakes when I have the time. 💓

I don't know why people don't appreciate oatmeal. In this case, you don't even know you're eating oatmeal. Oatmeal pancakes are also good, I know people are grounding oat to get oat flour and that is healthy as well.
