Una Bruja en la Cocina: "The Story Behind an Oreo Cake - Cookies & Cream" [EN] // [ES]

in Foodies Bee Hive2 years ago
Things in the kitchen do not always go as we want, today after so much insistence from Mi Mathias I decided to prepare him a small cake while he was at school, that would be his prize in case he did not hear complaints from his teachers, everything was going perfectly, I made some adjustments to a recipe that I saw a couple of weeks ago to @irenebarreto, I prepared the mixture, I decided to bake in the air fryer and after about 5 minutes in the fryer there was a power outage, I swear I wanted to scream and take out my repertoire of fluent French just thinking that the cake would be damaged, I was also anxious to know how it was going to look, definitely today I had to honor my blog, doing magic in the kitchen to not lose the mixture I had prepared.

The mixture was already about 5 minutes in the fryer, time in which it had begun to rise, this amount of mixture is ready in 20 minutes in the air fryer, so it had a quarter of the corresponding time, so my fear was that the temperature change abruptly damage it, so I did not want to preheat the gas oven and chose to finish cooking in a bain-marie, while heating the water on the stove while maintaining the temperature in the fryer, hahaha a feat that I hope I do not have to do again, and thanks to the small size of the mold could be done. Now, speaking of the result, I will tell you that, although I did not get the crunchy crust I expected, the cake was delicious, fluffy and soft, so with an extra chocolate on top we solved the pale that was left for not having done it in an oven.

As I told you at the beginning, this recipe is a variation of a recipe from cupcakes that I found on @irenebarreto's blog, and which are delicious in their original recipe, however, as I like to invent in the kitchen, I made a small change, replacing the butter with Greek yogurt and also varying the amount of it, the result was delicious, a spectacular and fluffy crumb, the truth is that I have to repeat this recipe, but I hope that the electricity does not fail me this time. Join me and I'll show you how to prepare it.

Ingredientes

250 gr Wheat flour with leavening agent
125 gr Greek yogurt
200 gr Sugar
2 Eggs
1 tsp Vanilla Essence
125 ml - 1/2 Cup Milk
4 - 6 Oreo cookies

Preparation

Preparation time 5 Minutes
Cooking Time 20 Minutes in Air Fryer / 45 Minutes in Conventional Oven

We will begin mixing with the help of a balloon whisk, the Greek yogurt and the sugar, we will beat until we form a cream where the sugar is not felt, we continue adding the eggs one by one, beating until each one is unified, once both eggs are unified we add the vanilla and integrate.

Continue sifting the wheat flour and integrate it in two parts alternating with the milk, beat until smooth and incorporate the crushed Oreo cookies, including the cream, beat just to integrate.

The ideal would be to take it to the preheated oven at 180 °C for about 45 minutes, or to the air fryer for about 20 minutes at 160 °C, in my case it was in the fryer for 5 minutes at 160° and about 30 minutes in a bain-marie on the stove at low heat. Once cooled, unmold and in my case I covered it with a chocolate ganache with dulce de leche and decorated with vanilla Oreo.

If I'm honest I think that having finished cooking it in a bain marie made the cake grow a little more hahaha, as I mentioned before, I longed for a crispy crust on the cake, however, the ganache was perfect, My Mathias more than pleased because he earned it for having behaved as he should at school and he could not even imagine the ups and downs I had to do to have it at home when he came home from school hahaha.
