Cooking Toman and Patin Fillet in Taucu Paste, so Yummy!

It was my first attempt making this patin and toman fillet, cooked in taucu paste!

I seldom cook fish in any other way than adding the fish fillets into soup. Maybe because I really do not have many recipes of fish up my sleeves too. One day when I was at the butchery, the lady there suggested to me I can cook fish with taucu paste which is actually fermented soy bean that is minced. So I bought a jar of it home, convinced by her.

At the same place, they sell frozen fish fillets. So I picked up 2 packs from there too.

So here are the ingredients I used:

  • spring onions
  • ginger strips
  • taucu or fermented soy bean paste
  • Fish fillets (can use any type of fish you can find, frozen or fresh)
  • turmeric powder

Let's get cooking!

Firstly in order to have very tasty fish, we need to marinate the fish fillets first. I prefer to marinate them overnight in ziplock bags. I added turmeric powder, salt, white pepper, a teaspoon of the fermented soy bean paste, oyster sauce and also a ginger scallion seasoning.

Rub them all in.

Pack the marinated fish fillets into zip lock bags and keep them in the chiller overnight.

The next day, they are ready to be fried. I heated up some oil in a pan and started putting them in fillet by fillet.

Fry them till golden brown and then I dished them out.

The aroma of the fish fillets after fried was amazing. It made me almost eat them on their own. But I remembered I needed to prepare the gravy.

Into another grill pan, some julienned ginger.

Next, added in the stalks of the scallions or spring onions.

Fry them up till fragrant.

When this was done, add in a small teaspoon on fermented soy bean paste. Do not add too much at one go because it is a salty paste.

Then add in some water to dilute it and turn it into a gravy. Add in the corn starch slurry.

Now add in the also the leaves part of the scallions in generous amount. Cook them altogether for a while.

Last but not least, arrange the fried fish fillets and pour the gravy over them! Done!

Honestly I did not expect it to taste so nice and appetizing! It is so delicious to be eaten with some hot steamed rice. I loved it and could not wait for the husband to taste it too! This is a recipe that can be repeated!
