Sweet and Sour Minced Pork and Beef with Bell Peppers and Tofu!

Yay, welcome back to my post on cooking a simple homecook meal!

I don't always like to cook but I cook often. On some days, I may cook a bit differently from usual then it actually excites me. Gotta just keep cooking as much as I can now that I am already 37 weeks pregnant, so I can feed my boys!

Today, I made this sweet and sour minced pork and minced beef, with some bell peppers and tofu! I knew it was my out-of-ordinary dish because the husband seemed to have refill it 3 times and adding on extra rice! Hahahah!

Simple ingredients needed:

  • minced pork 200g
  • minced beef 200g
  • a block of tofu
  • bell peppers
  • cucumbers (I used Japanese Kyuri)
  • tomato paste
  • sweet and sour sauce
  • onion
  • tomatoes

Cooking steps!

This recipe actuallt only requires dicing the ingredients and then cook them together! It is almost what I call a "no-brainer" cooking style heheh.

Firstly dice up all the vegetables like bell peppers, tomatoes, cucumbers. Just look at their colours! I like colours in my food, I mean natural colourful vegetables!

Dice up some onions too. Heat up some oil in the pan and let's get cooking by adding in the onions!

Fry them up till they are fragrant and softer.

Then in goes the minced or ground pork and the beef. Brown them up, season with some salt and white pepper!

After the meat are well cooked and the pinkish colour is no longer seen, add in the diced vegetables.

Let them cook together with the meat a while to soften them before adding in the sauce. Stir them and mix them up for about 5 minutes.

By then, you may see some water coming out naturally from the vegetables. Now, add in the tomato paste.

Add in some teaspoons of sugar and salt, as well as chicken stock to taste to balance the sourness from the tomato paste.

Finally add in the sweet and sour sauce from the pack. I use this that I bought from the store. If you want to self make it, you can mix the ingredients in it yourself too such as maltose, plum sauce etc. I find this sauce pack very convenient and easier for me.

If the gravy is too thick, add a bit of water. Make sure the gravy coats all the food ingredients in the pan or pot.

Tada, it is now ready to be served! Garnish with some green scallions or spring onion!

This easy-to-make dish is my kind of one pot dish to do at home. It has vegetables and proteins in ome same pot. I actually finish doing this in under 10 minutes after I prepped my ingredients earlier and just came home from class to cook it up. So glad to see everyone loves it. It was extra appetizing for me but I needed to control my intake of it! Do try it out and let me know if you like it as much as we did!
