Stir Fry Thick Rice Vermicelli With Ham and Eggs | Chinese Style

I had some leftover cooked sandwich ham in the fridge which I did not prefer to keep any longer. We had been eating ham cheese sandwich for breakfast for few days, and no one fancy it anymore. Hmmm...🤔 So what to do with the remainder ham?

Let's use them for stir fry noodle!

Honestly, I was out of idea what to cook for family actually. And I just simply whipped up this idea of using ham for stir fry noodle. It was my first time. Usually, I used chicken or pork or luncheon meat. It turned out amazingly delicious. However, personally, I still prefer thin rice vermicelli, but I only had thick one.

Preparing the noodle

In a pot, filled up with water then boiled the water. Only place in the noodle when the water was boiling. Boiled them for about 15 minutes or till the texture you desire. Then, drained the water away and rinsed the noodle with cold water to stop the cooking immediately. We did not want soggy mushy noodle.

Frying the eggs, the secret ingredients

My secret ingredients for a tasty stir fry noodle was to use a lot of eggs, more was always better in terms of this. I used 7 eggs instead of the usual 4 eggs. Who taught me this? My father. Haha. Seasoned the beaten eggs with a pinch of salt, then fried them. Really loved the eggy smell. Egg-xellento!

Preparing other Ingredients

Another secret was to use moreeee onions and garlic, so much so that the oil used for frying them would be so heavenly fragrant that when the noodles were coated with the oil, you could taste deliciousness.

I used bokchoy this round as it was my last batch of vegetables that was going to turn yellow soon if I did not use them sooner. Washed them clean and chopped into smaller pieces for easier bite.

And the ham of course, cut them into short stripes.

Let's cook!

In a pan, first heated up the oil and fried the ham a little to release the fragrance of ham. Then, scooped out to set aside

In a pan, heated up the oil and added in the onions and garlic, fried till fragrant. Followed by adding in the vegetables, stirred fry the vegetables till cooked.

Next would be adding in the noodles and seasoning of two tablespoons of oyster sauce, three to four tablespoons of light soy sauce (more because I did not have thick soy sauce), salt and pepper and sugar to your taste. Used all the arms muscles you got to mix them together till all noodles were coated.

Next would be adding in the eggs and ham, again mix them together till blended well with the noodles. I took some time to do this well because my pan was so shallow.

Just like this, this dish was done cooking. Scooped the noodle out and you might seasoned again with salt or soy sauce if you want it saltier. To me, it was good enough, simple delicious meal. It had the taste of home because my mother often stir fry noodles for us.

We all enjoyed this noodles veryyyyy much. I could have two servings. Haha. Carbohydrates overloaded man.

Glad to see you sharing us with this recipe! I really enjoy something made from sticky rice noodles. Previously, in my hometown, we only have rice stick noodle soup like three treasure rice stick noodle soup with tomato, cucumber and ham.

Oh yes, we enjoyed too. With tomatoes, cucumber and ham tasted great too.
