Spaghetti Carbonara

Hello everyone, today I bring you a fairly easy and traditional recipe, it is spaghetti carbonara, this is a recipe that is quite quick to prepare and with few ingredients.

For this traditional recipe, we will first make the carbonara sauce, while we add the water for the spaghetti

Let's start with the egg yolks, I used 3 in a bowl but I think 2 is enough, it also depends on the amount of pasta, I'm using 300 grams, so I decided to use 1 yolk for every 100 grams. We are also going to use cheese, in this recipe it is traditionally pecorino but I had Parmesan which is also valid 50 grams, it must be grated. Add salt and pepper to taste and mix and mix.

Hola a todos hoy traigo una receta bastante fácil y tradicional se trata de un spaghetti a la carbonara, esta es una receta que su preparación es bastante rápida y con pocos ingredientes.

Para esta receta tradicional, haremos primero la salsa carbonara, mientras ponemos el agua para los spaghetti

Vamos a empezar por la yema de los huevos, yo utilicé 3 en un bol pero creo que con 2 es suficiente también depende de la cantidad de la pasta, yo estoy usando 300 gramos, por lo que decidí usar 1 yema por cada 100 gramo. También vamos a usar queso, en esta receta tradicionalmente es el pecorino pero yo tenía parmesano que también es válido 50 gramos, debe ser rallado. Añadimos sal y pimienta al gusto y lo vamos a mezclar y mezclar.

Now we proceed with the bacon, I used a good amount and cut it into small squares, in a frying pan without any oil, I put them to cook until they began to release the fat and they became crispy, we are going to reserve this together with the fat released.

Ahora procedemos con la panceta o el tocino, utilicé buena cantidad y lo corte en pequeños cuadritos, en una sartén sin nada de aceite, los puse a cocinar hasta que empezó a soltar la grasa y se volvieron crocantes, esto lo vamos a reservar junto con la grasa que soltó.

Now when our spaghetti is ready, we strain the water and return it to the pot, the spaghetti must be very hot and we add the sauce that we prepared with the egg yolk and the cheese, we mix well so that with the heat of the pasta it cooks , finally we added the bacon and also the fat, we continued mixing.

Ahora cuando nuestro spaghetti está listo, colamos el agua y la devolvemos a la olla, el spaghetti debe estar bien caliente y añadimos la salsa que preparamos con la yema del huevo y el queso, mezclamos bien para que con el calor de la pasta se cocine, por último añadimos el tocino y también la grasa, continuamos mezclando.

And that would be all, at the end when it is already on the plate we grate a little more cheese and add a pinch of pepper.

Y eso sería todo, al final cuando ya está en el plato volvemos a rallar un poco más de queso y añadimos una pizca de pimienta.

Yes, this is the original Italian recipe ! But pasta must be very hot because that's the way the egg yolk can be cooked with that heat
