Good evening dear Hivers, I hope you are having a fun weekend. Today, I share with you an exquisite recipe, VERY healthy and easy to prepare... When I want to have a light and nutritious dinner I prepare this exquisite "soup with broccoli, pumpkin and potatoes". Whenever I prepare this recipe I always love to garnish with sesame seeds, but this time I used "chives and coriander" sautéed in butter, I confess that I LOVE this additional touch, as it provides a really spectacular contrast!
Buenas noches queridos Hivers, espero que estén pasando un divertido fin de semana. Hoy, comparto con ustedes una exquisita receta, MUY saludable y fácil de preparar... Cuando deseo cenar de forma ligera y nutritiva preparo ésta exquisita "sopa con brócoli, calabaza y patatas". Siempre que preparo ésta receta me encanta decorar con semillas de ajonjolí, pero en ésta ocasión utilicé "cebollín y cilantro" sofrito en mantequilla, les confieso que AMO éste toque adicional, ya que aporta un contraste realmente espectacular!
- To make this recipe I used the following ingredients: 1/2 bell pepper, 2 scallions, 1 small onion, 1 sweet bell pepper, fresh coriander, 350 gr of broccoli, 200 gr of pumpkin, 1 potato and 1 teaspoon of butter.
- Para realizar ésta receta utilicé los siguientes ingredientes: 1/2 pimiento, 2 cebollines, 1 cebolla pequeña, 1 ají dulce, cilantro fresco, 350 gr de brócoli, , 200 gr de calabaza, 1 patata y 1 cucharadita de mantequilla.
- Add to a deep pot the pumpkin together with the potato, cut in "big" cubes and the sweet bell pepper. I suggest removing all the seeds to avoid a "spicy" flavor.
- Agregamos a una olla honda la calabaza junto con la patata, cortada en cubos "grandes" y el ají dulce. Les sugiero extraer todas las semillas para evitar un sabor "picantoso".
- Cook over medium heat until they are tender.
- Cocinamos a fuego "medio" hasta comprobar que se ablandaron.
- In this step, we integrate the broccoli (we extract the stem). To disinfect I usually soak the broccoli florets with water and "vinegar", then proceed to wash to extract the vinegary flavor. We cook until it is "semi-soft".
- En éste paso, integramos el brócoli (extraemos el tallo). Para desinfectar suelo dejar remojando las flores de brócoli con agua y "vinagre", luego proceden a lavar para extraer el sabor avinagrado. Cocinamos hasta que esté "semi-blando".
- Sauté the onion and the bell pepper, when they are a little browned, add them to the soup.
- Sofreímos la cebolla y el pimiento, cuando estén un poco dorados lo incorporamos a la sopa.
- When we check that all the ingredients are softened, we proceed to blend at "high" speed until a smooth and creamy texture is obtained.
- Cuando comprobemos que los ingredientes se ablandaron procedemos a licuar a velocidad "alta" hasta conseguir una textura suave y cremosa.
- Add 1 teaspoon of butter along with a touch of olive oil to a non-stick skillet, fry the scallion and coriander until lightly browned (season with salt and pepper).
- Añadimos 1 cucharadita de mantequilla junto con un toque de aceite de oliva a un sartén antiadherente, sofreímos el cebollín y el cilantro hasta que se doren un poco (salpimentamos).

Se ve muy rica, las he preparado separadas, pero juntos debe ser igual de deliciosa, saludos.
Queda muy sabrosa amiga, es una receta que posee infinidad de propiedades y beneficios. Siempre preparo varias raciones y las guardo en envases herméticos de cristal, se mantiene en perfecto estado por 3 días.
