Saucy Sausages to the rescue...

20211005_192839.jpg
So...life gets hectic for all of us at times when the days seem to run away with us! I'm finding there are simply not enough hours in the day, or is it just that we're trying to squeeze too many things into our days?

But the one in charge of the kitchen has to make sure the family is fed on time, and that is my job!

Hubby can make tea or coffee and make toast plus boil an egg, but that's about all he can do as far as anything to consume goes!

A good old standby that has saved the day many a time for me, is sausages as I'm sure you've gathered by now!

Sausages are made from all kinds of meat that is ground, spiced and stuffed into casings - animal intestines or artificial casings made of collagen and cellulose.

Here in South Africa we have our own kind of national sausage called Boerewors, literally translated a "farmer's sausage."
Boerewors comes from our pioneering ancestors and is a mixture of ground beef and pork or lamb, little cubes of pork fat and spiced with coriander, cloves and nutmeg and vinegar added as a preservative. This spicy mixture is then stuffed into intestine casings.

The favourite cooking method for Boerewors is cooking it on the bbq, or as we call it, a braai, and then serve it in a breadroll with a tomato & onion sauce.
The job of cooking on the bbq falls on the shoulders of the menfolk, and that's something hubby can do.

When our pioneering folk was on the move, they could hang the Boerewors to air-dry to preserve the meat longer and it then becomes a dried sausage that we call Dried Wors, still very popular today.

There are not many meals I can think of that is as quick to make and will satisfy the family like sausages, mash and an onion sauce with chutney & Worcester Sauce added and peas or whatever frozen veggies are in the freezer.
I used pork sausages here as they're everyone's favourite.

We run a bnb and host many young guys who attend a local training centre and many order breakfast and a packed lunch.
Here I've cooked a thin beef sausage and served it on a bread roll with a mushroom, tomato & onion sauce, really quick and easy!

Hope you enjoyed the saucy sausage meals I've shared with you today.

Most countries worldwide have their own specialty sausages, perhaps you would like to tell us what your favourite or traditional sausage is?

Lovely! It is such a versatile food source for us South Africans. I remember all the times we have made this when no one has any idea of what to cook for lunch or dinner. I am still not sure what it is called, banny or vanny wors or whatever, but we cook it on an open flame. Thin boerewors cooks quickly and no hassle. My dad always did it over flames made from newspapers, and when I worked at the golf shop, we used twigs and fallen thin branches from the golf course itself. Recently, I have been using palm fronds that have fallen from the crazy winds here.

Awesome post! I am sad for all those who will never try boerewors.

banny or vanny wors

Gosh, I've never heard of that term, but you're right, I also feel sorry for people who will never get to taste a really good Boerewors!
You're certainly inventive when it comes to making a fire!
Thank you for visiting @fermentedphil 😊

Sometimes waiting for the coals to form is too long of a wait haha
Thanks for the awesome post and a reminder of our culinary excellence in South Africa.

Too few hours in the day, that's the problem 😂 now are you not the lucky one having a husband who does the boerewors cooking....

Looks tasty delicious and nutritious anytime of the day, take note next time you go near charity stores cooking boerrie rolls how people must stop to buy one! It's all about the smell.

Stay well!

You're so right Joan, it's that smell that's so tempting! Nothing like a boerie when they make it with a good Boerewors, hubby finds it difficult not stopping at those stalls!
Nice seeing you here Joan🤗

Much like yourself time... with last round of loadshedding this puts one back with everything again. Have a great weekend and keep well.

That’s good and looks delicious. Your family is lucky to have you as a good chef.

I think yours are even luckier with all the divine dishes you make @sreypov!
Thank you for the kind words 💞

Hahaha my wife said "what's that?" and I answered "this is home" 😁 haha. Pork sausages work as well, it does the trick here, a bit of chakalaka, and boom, voila dinner served. A true peri peri sauce is missing in action though.

cheers!

I hope you got to taste a good Boerewors when living here but you're right about the peri-peri sauce being missing, I just looove it! Chakalaka also is one of my favourites but it has to be served on phutu, I'm not a pap fan, I make a slightly moist but still crumbly version. I actually wrote a post on it a long time ago for #fruitsandveggiesmonday, but of course the Boerewors was missing in that post.
Do you get maize meal in France, or in other parts of the world?

Hello there!

I remember your chakalaka post, we've actually conversed about it before, I cannot blame you for not remembering, this is as we call in French "the ransom of glory", in other words, you are too popular @lizelle and can't remember every conversations you had with your audience haha.

We do get a maize powder called Polenta, this is just not the same thing, as not made out of the true milie but sweet corn, so it has more of a orange/yellow colour and not the same texture.

In SA, we were using pap also as a porridge in the morning, with milk, sugar, some good butter. I miss that the most, nothing better than a bowl of porridge (and a nap).

I found one African shop that had some in France, I might go on an excursion soon. Or while we're at it, we could come get our pap right at the source and spend a holiday in SA. 🙃

You are too kind @edprivat, it may just be these silver hairs that are causing memory loss 😅
We also love having pap with butter, sugar & milk.
I'm sure it's time you had a holiday in SA✈️ Are they allowing international travel for vacation purposes? We're missing our international guests!
Have a great week on the farm!

The sausage seems super juicy, I personally don't like those sausages that are available in the market, I don't know why but I never find the actually taste in them. My partner also makes an omelette with cheese and sausage. Honestly, I don't know what is the Ukrainian traditional sausages, perhaps I should do some market research to find it out.

I'm very fussy when it comes to sausages as some really aren't very good, I think some butchers add leftovers and soya to make budget sausages, I won't touch those!
Perhaps some countries don't have their own traditional sausages?
Thank you so much for your valued input.

Yes you are right, some are industrial as well.

No, I think Ukraine has something, there are many things I don't know about Ukraine, to be honest. I am still learning about this country :D

Have a nice day dear...

I think I'll book in to Lily's Cottage for a course soon @lizelle ,that break fast looks devine. Thanks for sharing.

Your food really looks delicious. I am sorry I have a special diet, lol.
