The Night on Colon Street.

The night market in Colon is a must visit every time you go to Cebu! It's open from 6pm to 1am, and has a lot of food stalls and shops. The food there is really delicious and cheap.

We went there on a Tuesday night and surprisingly, Colon St. was packed with lots of people. Some went shopping and some went for a food trip. There was A LOT to see in Colon Night Market. It was indeed a feast for your eyes, and your belly.

Given the fact that Filipino cuisines are so diverse and unique, the Colon Night market has a LOT to offer. The first thing that captured our attention was the classic sweet corn.

Making a sweet corn is very easy. You just have to boil it with hot water then dry it. After that, you cover the corn with butter and the choice of your flavored powder like cheese or barbeque. It sure is a mouth-watering delicacy.

Next up was Lechon (roast pig). This one was also very good! It's very juicy and soft on the inside. You can get it with gravy or just plain but both are equally delicious! They also have other types of roasted meats like chicken and beef as well as veggies like eggplant and potatoes so there's something for everyone here!

We also tried the scallops that were grilled! (I've never had this before so I wasn't sure what to expect). The taste is quite different from other types of scallops since it was cooked in an unconventional way and it was just perfect. I just loved how the melted butter and scallops compliment each other.

Of course, I can't complete this food trip without my favorite: Fried chicken. This is one of the most popular types of street food in Cebu. You can find it at almost every stall along your walkway! Fried chicken is made from chicken that has been battered with flour and fried until golden brown and crispy on the outside but still tender on the inside. This type of breading also makes it so that every bite tastes different from another, making it even more delicious!

My tummy was on the verge of being full, so to top it all off, I finished this food trip with dessert. I was craving something snacky so I chose this "twirly" thing, I don't know the name of this delicacy but basically it's like a different version of french fries. French fries is a staple of the American diet but this Cebuano style french fries is my favorite.

A photo of me drinking a very chilled sago.
Sago is made from tapioca starch or cassava starch that has been fermented and dried into a thick doughy consistency. The dough is then steamed to soften it and make it easier to bite into.

The sago in the Philippines is served with syrup or honey as well as other toppings like coconut cream, gata (shredded coconut), pandan (screwpine leaves), and more!
