MEAL PLAN | Healthy Chicken Burrito, Sauteed Mung Bean sprouts, and Creamy Chicken Soup

Most of you think that diet is a punishment that would hurt both mentally and emotionally. In this blog, I want you to shift the "D" word to a positive tone. I will share healthy recipes that you'd still enjoy, and make it possible for you to trim an inch off your jeans.

My 12 weeks of a diet is one hell of a ride. I'm not a perfect person and SURE I do have cheat days to give myself some treat!
I can honestly say that my diet days are still greater than cheating. Planning my meals makes it easier for me to execute CONSISTENCY which helps me slowly eliminate bad eating habits from my life.

For the 2nd week of June, the Menu is Chicken Burrito, Sauteed Mung Bean sprouts, and Creamy Chicken Soup.

Lovely recipes right from our fellow hive authors. Thank you @purepinay @eagleriggs and @arrlinn! Your works were enough motivation to make me recreate it while I have a lot of time to spend at home.

I had to sprinkle it with a little "me" fairy-dust. I used Chicken Breast as always because like I said in my early blog…

It contains lean protein and other important nutrients and vitamins that help build muscle, make our bones stronger, and reduces food cravings.

Charles doesn't like the breast part of the chicken, he believes it doesn't taste as good as his one and only favorite... "Thigh Part".
I always note this every time I order Jollibee's Fried Chicken for him.

Chicken Burrito Recipe

For the tortilla

  • 400g All-purpose flour
  • 200g Cornstarch
  • 5 tbsp of Margarine
  • 2 eggs
  • 3 Cups of water

Let's Cook It!

For the tortilla.
1.)Beat the eggs.
2.)Mix the flour, cornstarch, and water in a bowl until you don't see any lumps floating. It has to be smooth like my dream skin color and texture.
3.)The margarine I used was placed in the fridge so I had to melt it the pan. Once it melts, pour this unto the bowl with the beaten eggs.
4.)Put your pan to medium hit. Then fill this in. Don't be distracted while cooking. The tortilla will perfectly be cooked in 3 mins for each side.

For the stuffing

  • 1/2 kilo of Chicken Breast
  • 1/2 Cabbage
  • 2 white onion
  • 4 pcs. Tomato
  • Cheese
  • Mayo
  • Spicy Barbecue Sauce

For other ingredients of the stuffing, you don't need to cook them. You will love the little crunch you'll get. It needs to be freshly serve as salads! Only wash the vegetables and cut it in your preferred size.
1.) Boil the chicken breast. Set aside until it cools down.
2.) Remove the bones.
3.) Tear it to smaller pieces.

Place them on top of the tortilla. My arrangement is, Cabbage, Tomato, Chicken, Cheese, Mayo, BBQ Sauce, and White Onion. Just put the right amount of each, do not overfill the tortilla so it will be easier to wrap.

What I love about this recipe is the mung bean! It's one of my favorite vegetables next to Eggplant. Mung Bean Sprout has Folate, which is good for TTC women like me.

I replaced Pechay and Egg with Cabbage, and Tofu as ingredients. Like the previous recipe, I didn't exactly copy @juanvegetarian's original recipe and make my own version.

Sauteed Mung Bean Sprouts Recipe

  • 1/4 Diced Tofu
  • 1 large Carrots
  • 1 large Potatoes
  • 1/2 of Cabbage
  • 1/2 kg of Mung Bean Sprouts
  • 1 Onion
  • 1 head Garlic
  • 2 tbsp Fish Sauce
  • 2 tbsp Soy Sauce
  • 1 cup Water
  • 1 tsp Fine Black Pepper
  • Cooking Oil

Let's Cook It!

1.) Fry the tofu for 10mins until it turns to brown color. Set aside.
2.) Remove the excess oil from the pan. Only left a 2 tbsp of oil then toss the onion and garlic.
3.) Put the potatoes and carrots. Cook for 3mins.
4.) Put the Mung Bean Sprouts and Cabbage. Cook for 3mins.
5.) Put the water, soy sauce, fish sauce, and black pepper. Mix well, sautee for 3mins until all of the flavors comes out.
6.) Mix the diced tofu.

Why Creamy Chicken Soup?

I'm craving for Sopas yesterday but don't want to gather carbs in my stomach. Tortilla has a lot already and it's enough carbs intake for the whole week! The recipe is still the same except Macaroni and Hotdog. You'll never find them here.
Sopas is one of the most popular comfort foods of Filipinos during the rainy season. Its tender chicken breast covered in the creamy soup is best to serve when hot!

Creamy Chicken Soup Recipe

  • 1/2 Chicken Breast
  • 1 carrot
  • 1/2 Cabbage
  • 1 head Garlic
  • 1 Onion
  • Margarine
  • 1 Evaporated Milk 370ml
  • 3 tbsp of cooking oil
  • 1 tbsp of fine black pepper
  • 1/4 cup of water

Let's Cook It!

1.) Heat the oil in the pan. Saute the onion and garlic.
2.) Add the Chicken Breast until it turns golden brown.
3.) Toss the carrots.
4.) Add the Evaporated Milk and water.
5.) Add the black pepper and Cabbage. Mix well.
6.) Boil in low heat for 10mins.

I love reading recipes here in Hive. That's one of the greatest gifts of our technology today. Everything is accessible, easier to learn by reading other people's knowledge or experience. I'm more than grateful to admit that I always use Google whenever I don't understand something. Ignorance is a choice in this generation. Choose to be smart, choose to be a fool. It's up to you!

For me, I choose to stay in the middle in every aspect of my life. Too much information is a bad idea. I have the same Philosophy in cooking, all flavors should be balanced to get the right taste.
