Not a fan of avocado no more!

One of the things I get to enjoy in my alone time is to experiment on what's on the fridge or table. I enjoy discovering more of myself when it comes to cooking and making a dessert. It gave me the sense of being alone yet doing great in life. It handed me the power and freedom of living solo.

A SHORT STORYTIME

My former student who is now in her third year in college happened to visit me in the house. There were five in their batch who have become my real friends. We hang out during important occasions like birthdays but most of the time, we spend time along school corridors or pathways, sharing stories and experiences.

We were able to talk about a lot of things in life and I also gave them advice whenever they solicited one, including thoughts about heartbreak and moving on. I inculcated in them to always value and know their self-worth, no matter what situations they may be in. I am happy I get to instill in them the importance of prayers and keeping one's faith firm. They call me Mother Sunshine. I hope I am living the name they've given me.

One of them shared an article she had written when asked about someone whom she'll never forget. I was having a hard time at work and just in time, she sent me the article. It gave me the push to continue working because somehow, I have touched my student's life, if not all, at least some.

Aside from my former student's presence, she also gifted me with several avocados, grown in their backyard, and picked right before she left home to visit me. I was beyond happy with her gesture.

When she arrived, as usual, we talked about a lot of things and plans for the future. She was able to share her memorable experiences in her college life, the people she met and lost along the way, and the lessons she learned as she tried to keep her head high and focus more on her studies. Our conversation is non-stop. It has been a while since we got the luxury of time to see and spend time together.

Days after, the avocados were all ripe. Honestly, I am not a fan of avocados. I am more of a mango person.

MY VERSION OF AVOCADO ICE CREAM

I was thinking about how I could make the most of these ripe avocados. I just couldn't let time spoil them. That's so ungrateful of me. So, I opened the fridge and looked for something I could use for this avocado recipe. My eyes were examining what was on the fridge. My eyes were then hooked to the three pieces of 500ml all-purpose cream. Right then and there, I had a great plan in mind. I would make an avocado ice cream in these easy steps.

EASY STEPS🥑🥑🥑

🥑Peel the ripe avocados.

And may I add, I am already a huge fan of avocado! It tastes great more than I have imagined.

This is all for today's blog. This avocado ice cream tastes better than it looks. I can guarantee you that.

Do you have a recipe having avocado as one of the main ingredients? I look forward to reading your own experience with it.

Thank you, Hivers! Be well. Be safe.

Avocados don't grow where I am, but they are at our markets. I love them, but I have never seen one that had a red peel, only green ones here.
