A few days ago I went shopping at the traditional market in the city where I live now. Basic needs all plummeted, ranging from shallots, cooking oil to chili peppers. Ahhh as a person who loves cooking like me this is bad news. If I usually stock a lot of ingredients this time I only bought half of it. Hopefully in the next week the price of all necessities will return to normal. While shopping at the fish market I was very curious about an old man who was selling there, he was empty of buyers, I approached him, it turned out that he was selling shells that had been peeled. The price was very low he only sold 300 grams for only 15,000 I immediately bought it.
Now the plan is that I will sauté these clams with potatoes as usual. But for some reason I remembered my mother's recipe for making clams with spicy seasoning, often known as Pheip in our local language. As a result, I took the initiative to make the recipe, but I slightly modified the recipe by adding green onions to make it more savory and fragrant.
This recipe is very simple and easy, but the spicy flavor is quite tantalizing. The most important thing in processing clams is to marinate with salt and enough lime juice so that the clams do not smell fishy. Here's the recipe!
Ingredients Needed
1 spring onion stem
10 curry leaves
2 bay leaves
5 green chilies
Enough onion
1 tomato
5 cayenne pepper (optional)
1 grain hazelnut
1 star anise flower segment
4 cloves shallots
2 cloves of garlic
1 teaspoon ground pepper
½ teaspoon ground turmeric
Cooking Procedure
Prepare the ground spices first then blend until smooth using a little water.
Cut the spring onions into one cm pieces then halve the green chilies.
Cut the tomatoes into small pieces or according to taste then cut the onions too.
Saute onions with curry leaves, and also bay leaves with 3 tablespoons of cooking oil saute until fragrant and brownish yellow onions.
Add ground spices then give enough water to saute until the spices boil.
Then add the clams, here the clams are a bit frozen because I just took them out of the freezer I forgot to take them out earlier. But don't worry it will melt by itself.
Add the green chili pieces and saute until the spices are absorbed.
Once the clams are tender, add the tomato pieces and spring onions.
Cook this dish until perfectly cooked and can be enjoyed, don't forget to correct the taste if it's not right, you can add salt. Since I have added salt at the beginning when preparing the scallops, the flavor is just right.
Result
Taraa!!!!
Pheip clams or jerang sauteed spicy seasoning is ready to be served, serve with warm white rice. And enjoy it for lunch or dinner, you will definitely love it. This scallop dish is not fishy at all, it smells really good with various spices and natural herbs. And what I like the most is the spicy and savory taste of the mussels. The texture is not tough at all because it is cooked long enough in spices.
So for those of you who are confused about processing dara mussels, try making this dish, I'm sure you will like it. Well friends, hopefully this recipe will be an inspiration for you if you buy shellfish later.
