Gluten-Casein FREE food for persons with Autism, IBS and more ... one of my recipes

It is difficult with some cuisine to prepare Gluten/Casein free food. Our western cooking styles are specially difficult to change as we are much leaned to cow's dairy and wheat products.

When my child has been diagnosed with Autism and gluten-casein intolerances it was very difficult to change his food regime.

Now, he is a healthy young man, a bit different but very handsome and lovely. His doctor said to me: "I don't know what you are doing, but keep it going."

Here is one of the recipes you may use if you have irritabile bowl syndrome or intolerance to gluten or casein.

Stuffed Sauerkraut with minced meat

Chop 2 large onions and fry it on vegetable oil with salt (do not put a lot of salt as Sauerkraut is usually very salty). When onions turn golden add some sweet paprika spice (I put usually one tea spoon). Put 500 gr of mixed minced meat (I use mixture of 1/2 pork and 1/2 veal meat) and continue to stew adding the small amounts of water from time to time. Add some pepper (according to your taste). At the end, add one tea cup full of rice in this mixture. You don't need to cook the rice.

When this is done, take the leaves of Sauerkraut. Peel the pedicel so the leaves are easier to fold. Take one leaf (if too large, you can cut it in half) and put about one table spoon of meat mixture and roll. Pour the pot with water and cook for at least 3 hours on a low heath on an ordinary stove. In the water you can put some smoked bacon or smoked pork meat for better flavour. I cook this in a crock pot (stew program, 40 minutes, under the pressure).

Instead of Sauerkraut you can use zucchini or bell peper to stuff.

If using zucchini do not add smoked meat. You can add some of dried dill in the water an serve with yogurt.
If using bell peper for stuffing, in the water in which they are cooked, add some tomato sauce.
