Veg Fried Rice (Chinese Fried Rice) This recipe is included in the menu of all restaurants and street vendors. This recipe can be made from leftover rice as well which is rich in nutrients of all vegetables.

Ingredients:- For cooking rice:-

  1. cup rice

  2. Oil 1 tsp

  3. Salt 1 tsp

  4. Water for soaking and boiling rice

  5. Rice 1 cup

  6. Garlic, ginger and green chilli finely chopped

  7. Onion 2 finely chopped

  8. Cabbage 1/2 cup finely chopped

  9. Capsicum 2 finely chopped

  10. Spring onion finely chopped 1 cup

  11. Carrot 1 finely chopped

  12. Soya sauce 1 tsp

  13. Vinegar 1 tsp

  14. Black pepper 1 tsp

  15. Salt 1 tsp

  16. Fried rice masala 1 packet

  17. 2 big spoons oil

Method :-
First of all, soak the basmati rice in a bowl for 30 minutes

Now, put 1 tsp oil and 1/2 tsp salt in 4 cups of water in a pan and let the water boil.
When it boils, add the soaked rice and mix it well and cook the rice till 80%. Then, after cooking, strain the rice and add 1 glass of cold water so that the cooking process can be stopped completely and let the rice cool down.

Now put 2 teaspoons of oil in a big pan and add mustard seeds, cumin seeds and asafoetida and let them crackle. Then add ginger, garlic and green chilli paste and fry it.

And add onion, carrot, capsicum, cabbage, spring onion and cook on high flame.

Then 1 teaspoon soy sauce

1 teaspoon vinegar, 1 teaspoon black pepper and fried rice masala
