Salmon in Coconut Milk (Hive Creative Contest)

Good evening! Few days ago, I've seen a post by @zord189 "Hive Creative Contest | Let's Go Fishing(Contest Details)" wherein this week's main ingredient is fish. When I read the post, there's only one fish recipe that came to my mind. My mother's delicious Salmon in Coconut Milk.

Salmon fish is a kind of fish that is considered fancy in my country, however, there's also a local salmon fish and it's way cheaper that those commonly known and sold at groceries. A kilo of this local salmon is only less than 150 Php or $3 USD. Actually, it may sound funny but we began eating salmon during the pandemic when most people's lives became difficult. That's because this fish is cheaper than most fish sold at the wet market. It's surprising, I know.

So moving on to my mother's recipe for Salmon in Coconut Milk:




SALMON IN COCONUT MILK


INGREDIENTS

♥ 1 Kilo Salmon
♥ 2 Cups Coconut milk
♥ 1/2 Garlic bulb
♥ 1 Whole Onion
♥ 1 Tbsp. Ginger (Grated)
♥ 1 Tsp. Ground pepper
♥ Green chili leaves
♥ Bell pepper
♥ 2 Red chili pepper
♥ Salt
♥ Vetsin (Msg)
♥ Butter




PROCEDURE


#1 Mince garlic and onion. Then in a pot, saute garlic, onion, and grated ginger in butter.

#2 Pour the coconut milk. Let it boil and wait until the texture becomes thick.

#3 Put the salmon and add ground pepper according to taste.

#4 After that, add the chopped green and red chili pepper, and chopped bell pepper. Add salt and vetsin (msg) according to taste. If I am not mistaken, the vetsin is considered unhealthy, right? But Filipino moms love using it. 😂

#5 And last, add the green chili leaves.



Tadah!!


The salmon in coconut milk dish I used in this photo doesn't have the green chili, bell pepper, and green chili leaves, and it's also fine. These ingredients are optional. If you don't like it spicy then don't add it. In our case, I request for this dish to be a bit spicy and it so happened that we don't have those ingredients that time. So my mother only added a few red chili.

Anyway, this dish still tastes delicious with or without chili. It's a cheap dish but very delicious. It's my favorite recipe for salmon and we're lucky because coconut milk is easy to find in the market here in my country. You can either use a fresh coconut milk which you can buy at the wet market but there are also coconut milk sold in pouches at the grocery, if you don't like to go to the wet market.

Salmon in coconut milk is best paired with rice. For us, we sometimes pair it with fried rice. Yum!
