Tonkotsuya Ryuho Daijayamashiten

It was a cold-as-heck night in Osaka's Dotonburi area, and my friends and I decided to take a leisurely stroll around the neighborhood in search of some delicious food and yes, some hot bowl of ramen was needed. We stumbled upon a variety of street food vendors and restaurants, but many of them seemed to close early. However, we did come across a few gems that were just starting to open their doors.

One of the highlights of our night was a midnight ramen spot that opened at 10 PM and closed at 5 AM. We were some of the first customers to arrive and by the time we left, the place was packed. The broth was absolutely epic. It had a rich, fatty flavor that I could tell came from hours of cooking pork bones. The noodles were soft yet chewy, just the way I like them.

The best part of the experience was sitting around the cooking station and watching the chefs work while we ate. It added an extra layer of excitement to the meal -- This is one of the things I love the most here in Japan! We gotta eat and enjoy the art of cooking at the same time! And, of course, having a cold glass of beer to wash it all down was the perfect ending to a delicious late-night dinner. Overall, it was a great experience! Love it a lot! Will sure be back again.

Takotakokingu Demaeten

As we continued our foodie adventure.. we stumbled upon a small, hidden takoyaki spot that we never would have found if it weren't for our random strolling. Takoyaki is a traditional Japanese snack made of fried octopus balls, and it's a staple in Osaka.

Normally, takoyaki is served with a combination of barbecue sauce and mayonnaise, but this spot had a unique twist. They served the takoyaki with salt instead. At first, I was a little skeptical, but I decided to give it a try. And let me tell you, it was a game changer. The simple seasoning of salt really allowed the flavors of the octopus and batter to shine. It was a nice change from the usual sauce and mayo, and I found myself liking it even more.

The takoyaki was crispy on the outside and fluffy on the inside. And the octopus inside was tender and flavorful.This hidden takoyaki spot was a true gem! Bonus, there's that cute friendly guy doing all the service at the window :D
