Today I want to congratulate @ecotrain and @ocd, for the great success of the vegan initiative for the month of August, this was an incentive for all of us to get involved in the wonderful world of healthy eating, although I confess I am not vegan, always I have liked to eat as healthy as possible and that is why I included many healthy foods in my diet and I am familiar with them and their combinations.

This initiative particularly fueled in me the desire to eat healthy and include more vegetables, cereals, and grains in my diet, hence today, to start the month of September on the right foot, I wanted to make a complete vegan menu, which will include as The main course is a delicious lentil roll, stuffed with vegetables, accompanied by rustic potatoes, with pepper and fine herbs, and as a final touch I will accompany this dish with a delicious dessert, a delicacy of coconut and cinnamon ... a delight ... This menu today shows that eating healthy does not mean eating bland food, on the contrary, these dishes will be loaded with a lot of flavor.

Main course (Lentil roll, vegetable filling)

This dish is ideal for a lunch or dinner, since it is complete and is made with lentils, which are a source of iron, manganese, potassium, copper, phosphorus and zinc, they also provide folic acid and vitamins A, B1, B2, B3, B5, B6 and B12, choline, vitamin C, K and vitamin E.

You will need to:

β€’ 250 gr of lentils.
β€’ Vegetables of your choice to fill, I will use eggplant, tomato, chives and carrot.
β€’ 1 tomato, chili peppers and chives to make a sauce.
β€’ Paprika, salt and pepper.
β€’ 3 oil tablespoons.
β€’ Aluminum foil.

First you place the lentils to boil, when they are loose, strain them, then prepare a sauce with tomato, chives and chili peppers, and add it to the lentils, let them cook for a few minutes so that they are very tasty, then place the lentils stewed in the blender or processor to form a paste that will be the lentil meat.

You must prepare your vegetables in a pan with a little oil , add tomato, chives and aubergine with a teaspoon of paprika, salt and pepper to taste, let them wilt and combine their flavors.

Finally, place an aluminum foil and smear it with oil, with your hands flattens the lentil paste and spread it out forming a rectangle, then add the stewed vegetables, carrot sticks and chopped chives, with the help of the paper you slowly roll up to form the roll and secure with aluminum foil.

You will need to:

β€’ Potatoes.
β€’ aromatic herbs of your choice.
β€’Salt and pepper.
β€’ 1 tablespoon of oil.

Chop the potatoes into rustic pieces, boil for 20 minutes, when they are ready, place them in a pan with the tablespoon of oil, add the herbs, salt and enough pepper, you must stir until they take a golden color.

wow, so original!! this looks super healthy... we dont have to be vegan all the time, but with dishes like this we also dont need to eat meat or dairy all the time either ! GREAT recipe thanks for sharing.
