Delicious Ginger Beef Porridge - A Healthy Immune-Boosting Soup for Stormy Days in Da Nang

Viet Nam in general and Da Nang city especially is still suffering from storms and heavy rains these days. The moisture in the air is crazy high, and it makes everything grow mold so quickly. It’s also the kind of weather that easily gets people sick like catching colds, the flu, or other health problems.
So to deal with that, you’ve got to stay healthy, and one of the best ways is to eat good food that boosts your immune system. A strong immune system is your best protection during this kind of weather.

My favorite soup that makes me feel warm, cozy, and instantly healthy is ginger beef porridge.
Now, porridge might sound a bit boring at first, but trust me, this version is not just healthy but really delicious. It’s easy to eat, easy to make, and packed with nutrition.

Ingredients:

  • Beef, white rice
  • Ginger, onion, shallot, garlic
  • Carrot, spring onion
  • Salt, fish sauce, black pepper, msg(optional)
  • Cooking oil

How to make it:

  • Step 1: Prepare all your ingredients by cleaning the beef, vegetables, and rice, then chop or mince them finely

  • Step 2: Heat a little cooking oil in a pot. Toss in the shallot and ginger, stir until fragrant, then add the rice.

Stir the rice with a bit of salt until it looks dry and lightly toasted. Next, pour in water, stir well, and close the lid. Let it come to a boil.

  • Step 3: While the rice is cooking and getting soft, prepare another pan with some oil. Add onion and stir until fragrant. Then add the minced beef and carrot. Season with salt, fish sauce, and msg (if you like). Cook until it’s about 90% done.

  • Step 4: After 15-20 minutes, when the rice has softened into porridge, pour the beef and carrot mixture into the pot. Mix well and cook for another 5-10 minutes.

Finally, toss in the chopped spring onion, and tata that’s it, the ginger beef porridge is ready!

Now scoop yourself a warm bowl, add some fresh ginger and some black pepper on top.

Do you cook with gas or electric? I try to do things like this but I always end up either under or overcooking the initial vegetables. I can do meat and watery things just fine but I always end up doing something incorrect to the vegetables.

I cook with gas. And yeah, it can be a bit challenging to get vegetables just right. But in general, vegetables should be cooked quickly and it’s actually better to slightly undercook them so they keep their nutrients.
