The Last Carrots From 2021

Hello, hivers and gardeners!

I have a refrigerator in my basement that I use for storing the potatoes and carrots during the winter. I still have a fair amount of potatoes from last year in the fridge , and I also had the last of the carrots from last year. The carrots were starting to grow tops and hair roots, so I decided to process all of the ones that were still good. A lot of the small ones had gotten soft and rubbery but most of the bigger ones were still good. I sorted all the carrots out and put the good ones in the kitchen sink.

I washed all the carrots and cut the ends off them. It's not a lot of carrots, but they're definitely edible.

Then I peeled them and cut out the bad spots that I found.

From there, I cut them up and put them into my steamer pot.

I steamed them for about 6-8 minutes. Then I filled 4 wide mouth pint jars with the carrots for freezing, and what was left over went into a container to be used in my next crock pot stew.

The nice thing about these wide mouth pint jars is that they have a bit of a taper, so the frozen carrots will come out of the jar easier than they would with a standard mouth jar. I was able to use the plastic storage lids on the jars because I was freezing them. This seemed to be the easiest way to deal with the carrots so they wouldn't be wasted.

Those straight side jars were also made for freezers and I believe they made them sturdier for that. I also have a fridge that I store carrots in. I had a potato box in the old root cellar for those.

I'm usually not this successful with storing carrots over the winter, so this worked out pretty well for me.
I would like to get more of those jars for freezer storage. I just need to look for them at the local stores, I guess.
