Simple food cooked by my wife using some chemical free vegetables in our home garden, Spicy stir-fried purple eggplant and bitter gourd with minced pork.

Hello everyone. How are you today? I hope all is well with you and your family. This post, I have another simple food that my wife cooked to share with everyone. Although she’re not experts for cooking. And it's just cooking for our family. Of course every time before my wife cooks, she looks at the vegetables in the home garden and uses them for ideas on what to cook.
The purple eggplant plants I planted in the home garden long ago, even though there were only four of them. And not yet big. Now the purple eggplants are starting to bear fruit again and can be used as ingredients. The bitter gourd too, it started bearing fruit again. So my wife wanted to pick purple eggplants and bitter gourds to cook a spicy stir-fried purple eggplant and bitter gourd with minced pork.

Ingredients for spicy stir-fried purple eggplant and bitter gourd with minced pork.

  1. purple eggplant
  2. bitter gourd
  3. basil
  4. pork
  5. chili
  6. shallot
  7. garlic
  8. sugar
  9. pork flavour seasoning powder
  10. oil

Ingredients

Mince the pork to make minced pork.

Cut the eggplant and bitter gourd.

Put the pan on the stove and heat the oil. Then fry the purple eggplant in the pan until soft. And put them in a sieve.

Crush the garlic, chili and shallot using a pestle and mortar.

Then put the pan on the stove and heat the little oil again. Add the crushed chili with garlic and shallots in a pan. And stir-fry until cooked and fragrant.

Add the minced pork in the pan and stir-fry until the minced pork is cooked.

When the minced pork is cooked, add the bitter gourd to the pan and stir-fry until the bitter gourd is cooked.

Then add the purple eggplant in the pan and stir fry a little.

Add basil to the pan.

Season with pork flavour seasoning powder. Stir-fry all ingredients together for a while and turn off the stove.

Spicy stir-fried purple eggplant and bitter gourd with minced pork. Enjoy 😋

It's a great feeling to pick vegetables from the garden instead of buying them. I have eggplants planted in my garden. Even though they are just starting to bloom, they are still small.
