You need a well exposed shot to start with, without burned (over-exposed) areas.
Then mess around with the highlights and shadows in certain areas till you achieve what you're aiming for.
Another way to make your subject stand out is to use a shallow DOF while you're shooting. That will isolate your subject by blurring the background. A good exposure is still the key here too.
