Favorite Indian National Dishes

How's the week going on? Getting ready for the weekend?

Me too. And here I am sharing few of India's favorite National dish items.

Well, I think the requirement is to share One favorite National dish, but India being a diverse country, has almost One or more favorite dishes for each of the states we have and I am sharing 3 most favorite Ones as below.

1. Khichdi:

Khichdi is our most favorite dish which is prepared with equal combination of rice and Moong dal (Green Gram).

Apart from rice and Lentil/Gram, we normally use vegetables along with salt and also season toppings of onion and tomato to add more flavor.

Khichdi preparation is very simple with soaked and cleansed Rice and Gram are used in equal proportion and cooked in a pressure cooker for well mixing of the ingredients and then we add salt and vegetables to it and served hot to retain the flavor.

We prefer the Green Gram itself although we have option if using Toor Dal(Pigeon Pea), Masoor Dal(Red Lentil), Urad Dal(Black Gram) and it's because, Green Gram doesn't produce gas or gastric troubles like other Grams/Lentils and is easily digestible.

Because of this nature, Khichdi with Moong Dal is preferred by Doctors when we have an upset stomach or stomach ache.

2. Idli with Chutney and Sambar:

Being a South Indian, One of my favorite breakfast dish is the Idli which is just like Khichdi is easily digestible and favorite breakfast item not just for South Indians, but even North Indians like it a lot.

Idli, is prepared with cleansed, soaked and grinded Rice Sooji (Rice Semolina) and Urad Dal(Black Gram) in 2 rice to 1 Urad Dal proportion.

The 2 ingredients mentioned above are soaked for 5 to 6 hours and then grinded and then kept it for fermentation for about 6 to 8 hours (normally overnight) and then cooked using Idli plates in steam cooker.

Normally Idli will be consumed with coconut chutney and traditional Indian sambar prepared with vegetables and spices.

Idli is normally prepared in round oval shape and also in normal breakfast plates known as tatte idli.

Best companion of Idli we normally use is Vada or Medu Vada which is prepared with Urad Dal, Salt and water and is mixed with other ingredients like black pepper, green chilies, ginger, coconut pieces and so on as per the taste requirement.

3. Dosa:

Just like Idli, Dosa is another South Indian favorite breakfast dish which can be of Hundreds of varieties with street Dosa makers preparing more than 100 types of stuffed Dosas.

Like Idli, Dosa is also having main ingredient Urad Dal along with rice directly used instead of sooji(semolina) and we use other ingredients like Poha(flattened rice) and Methi(Fenugreek).

Dosa ingredients are also soaked for 4 to 6 hours and cleansed and grinded to prepare the batter and then fermented overnight and Dosas are prepared using the batter on a tawa(pan).

Dosas also can be consumed with coconut chutney and sambar or even chutneys prepared from groundnuts or chana dal(split chickpeas).

While Khichdi can be consumed for breakfast, lunch or dinner, Dosa and Idli are preferred as breakfast or evening snacks and are our most favorite food items.
