Hello friends. Thanks for dropping by my blog. Today was a fantastic day because we went to a show as a family. My husband,my daughter and I had our breakfast, got ready and headed out.

I put on my sunglasses because it was sunny out. Speaking of sunglasses, isn't it hard to find time for ourselves during vacations? I feel cooler with them on. I need to get a few simple pairs to match my outfits. I picked three and I'm glad I did. They fit well, are sturdy and look great on me. 😎

We were super excited about the show. The tickets were pricey, but it was for a group we really liked. Our seats weren't the best, but that didn't matter. We couldn't wait to see the show. We laughed so hard that we had tears in our eyes. Watching it live is so different from watching it on TV. It was a blast

After the show, we were tired but very happy. I've been craving Olivier salad lately. Not sure if I saw it somewhere or just felt like it, but I really wanted to make it. After a quick rest, I got to work.

I already had the ingredients. I just needed to chop them up. I always go with the classic recipe: potatoes, carrots, peas, bologna, pickles and eggs. I tried it with boiled meat during New Year's, but my family didn't really like it. So now I stick with bologna.

Although I didn't mind it with meat, everyone said to stick with the classic. Maybe it would've been a bit healthier with meat, but oh well, let's keep everyone happy. I don't mix the salad all at once.I do half now and the rest later, so it stays fresh.

I wanted to try making cheese. I got this recipe from a friend and it's been on my mind for a while.

20240505_19953.jpg

It's made with simple ingredients: cottage cheese, milk, eggs, butter, salt and baking soda. Here's what you need: 4 cups of whey (or cottage cheese), 4 cups of milk, about 7 tablespoons of butter, half a teaspoon of salt (add more if you like it saltier), half a teaspoon of baking soda and 2 eggs.

To start, I mix the cottage cheese with milk and heat it until the whey separates. You have to be careful here. If you overcook it, the cheese gets tough. I was a bit nervous and didn't cook it enough, so there were little lumps in the cheese.

After that, I strain the mixture to separate the extra whey. I melt the butter and add salt and baking soda, then add the strained cheese and melt it over low heat while stirring.

But because of my mistake, the cheese didn't fully melt and there were lumps. I stirred for a long time, but it didn't help. I even turned up the heat and it started to melt, but it wasn't quite what I wanted. Oh well, still experimenting. Maybe next time it'll turn out better. What do you think? Would you try making cheese? If it works out, it can be really fun.

The cheese became smooth once it boiled. Then I added the eggs and I was a bit worried that they might cook and mess up the mix, but thankfully, everything turned out fine.

I stirred a lot. Maybe that's why it all came together. I poured the mixture into a mold and left it to chill in the fridge for at least two hours. I have to admit, though, I was a bit anxious. The cheese wasn't exactly what I had in mind. I expected it to be softer, but it was still tasty. I watched a ton of videos and realized where I went wrong. I think I'll do a better job next time.

I wanted to try again, but I figured we should finish this cheese first, then I’d give it another shot. Here's the result: I could barely snap a photo of the cheese because it was almost all gone. It looked a bit weird, but it tasted really good. I had some trouble getting it out of the mold, probably because I didn't grease it enough. I’ll fix that next time. Despite everything, it was delicious.

So, the takeaway is that I learned from my mistakes and I'll do better next time. 😊 You just have to trust yourself and be patient. In the end, I managed to make some tasty cheese, even if it looked a bit odd. I'm planning to give it another go, fixing my mistakes. I’m sure it'll be better next time.

The salad looks a bit like our potato salad. I never made cheese myself.
