Today, I decided to prepare Crispy Baigan Bhaja, a delightful and flavorful dish that’s quick, easy, and loved by all. With its crispy texture and tangy-spicy flavor, this dish is sure to win hearts. Ingredients
1 large eggplant (baigan)
2 tbsp gram flour (besan)
1 tsp red chili powder
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp dried mango powder (amchur)
1/4 tsp black peper
1 tsp oregano
Salt to taste
1 tbsp tomato sauce
Water (as needed)
Mustard oil (for frying)

Prepare the Eggplant Slices
Wash the eggplant thoroughly and cut it into 1 cm thick slices.
Make the Spice Paste
In a plate, mix gram flour, red chili powder, turmeric powder, coriander powder, dried mango powder, oregano, black peper,salt, and tomato sauce.
Add a little water to make a thick paste.
Coat the Slices
Take each eggplant slice and coat it evenly with the prepared paste. Ensure the slices are well-covered for maximum flavor.
Shallow Fry
Heat a pan and add mustard oil. Once the oil is hot, place the coated slices on the pan.
Cook the slices on medium heat until both sides turn golden brown and crispy. Flip them gently to avoid breaking.
Serve Hot
Remove the slices from the pan and place them on a paper towel to soak up any excess oil. Serve hot with mint chutney, ketchup, or as a side dish with your meal.

I don't like brinjal curry much. I don't know why but I don't feel like eating brinjal when I see it. This new recipe you have made looks very tasty, I will try it and someday on a holiday I will try to make it with my mother.
