Mango is a very popular delicious fruit. Mango is the only alternative of itself with the taste, smell, color and nutrition . So mango is called the king of fruits. Mango is usually eaten as raw, ripe and even frozen. Besides, mango, juice, puree, pickle, chutney can be made from mango through processing. Today I have made Raw mango pickle.
It's a very simple recipe.Let see how I did it.
Ingredients
- Mango Slice 1.5 kg
- Sugar 1 cup
- Salt 1 tsp
- Red chili 1 tsp
- Coriander 1 tsp
- Hot Spices 1 tsp
- Cinnamomum tamala 3 pics
Here I have take 1 and 1/2 kg raw mango, 1 cup sugar,1 tsp of salt, red chili, coriander and hot spices.
At first I will put all the raw mangoes in a pressure cooker. This mangoes looks like ripe but inside all of these raw with taste.
Then I have added 500 ml water in the cooker.
Lid up the cooker by it cover.
Now boiled these mangoes within two whistle of the cooker.
After two whistle I opened up the lid.
Now blend all the mangoes inside the cooker.
Now I put all those blended mangoes in this net.
With the help of this net I have separated the juice and mango fiber.
Here I have taken a pan.
And put all the mango juice in it.
At these moment I have added three piece Cinnamomum tamala leaves.
Now I will add 1 cup sugar in it.
Then I have add salt, red chili, coriander and hot spices into it.
I started to cooking at low temperature and stir this at a regular time by time period.
After time to time I have checked the thickness of the liquidate regularly.
When the thickness of this mold become sticky I stopped the heat.
Here I have taken a plate and drop some mold into it.
A thin coated layer of mango. Then I have dry it into the sunshine.
After 12 hours of sunshine I have cut the coated layer into pieces of bar.
