I agree, good ideas and effort for sure, they have got that mix right. I was talking to a friend of mine yesterday, telling her about the Kent Town Hotel and we decided we'll be going there again, I'm looking forward to it.

Thy have one of those central kitchens surrounded by glass so one can watch the chefs work (it's not in the dining room of course though) and that's really cool to see what goes into the food preparation.

Yes, in my opinion, the open kitchen is now a must and is synonymous with quality, even where I work we have it 🤟
