The walkthrough tours perhaps help you understand how these things work and give you a more visual guide of those features along with some commentary by me as to why they're important. I also tend to throw out some interesting teasers about how things can be upgraded even more.

Is it possible to upload animated gifs to the avatar icon?

no idea about animated gifs nor would i personally want to encourage it. so i won't be looking into it. hahaha ... also no idea about this ring you speak of.
it is suggested you help your referrals out and you have a list for that purpose so you can see who they are and if they are needing some RC. In a couple months there will hopefully be a system to share your RC itself instead of the HP.
the browser extension "awesome screenshots" is actually quite decent for recording tutorials but if not then people use obs to do it.
peakd is not an app in the app store. We have a mobile version and we suggest using peaklock because keychain isn't fully ready for mobile as of yet. You can put the peakd.com page on your mobile device so it looks like it's an app.
there is no mass unfollow feature i'm aware of created and publicly available... maybe some developer somewhere has created one but i wouldn't know of it.
we have discussed allowing the connections/following list be sortable but I think it's actually pretty tricky to do. cc @asgarth
