Kimchi and Everything

Kimchi is fermented cabage or vegetables with hot pepper powder, salt, garlic ginger and other local ingredients. It's such a powerful vegetable that if you leave it in a closed container it will give off a by product of carbon dioxide. The gas will make the container expand.

This weekend I was prompted by the weekend engagement post to think about some of the strange combinations of kimchi foods I have had.

Whether it is Korean food or not, I will eat kimchi with every meal. It is like eating pickles to me.

Of course kimchi tastes good in soups. If I eat Ramen my first thought is kimchi. It turns out as I get older the soups seem to be more and more bland. I don't want to add extra salt. The best thing for me to do is to add some kimchi. That sounds like a reasonable thing to do, but all of my soups end up turning red.

I love kimchi with rice, but I have the hardest time to eat meat without kimchi. I need that extra kick from the fermentation and pinch of acid to break down the meat. If I have lettuce and meat and kimchi then I am set.

I love kimchi that is cooked. I could eat kimchi with anything, not Just Korean food. If I have a bowl of noodles I want kimchi. If I have an omelet I want kimchi. At lunch every day I pile on the kimchi without even noticing. I cook my fish with kimchi. To my sandwich the kimchi becomes my pickle. To my hotdog the kimchi becomes my sauerkraut. To my nachos the kimchi becomes my salsa and to my lasagna the kimchi becomes my extra speziato.

Some years ago my son wanted to change his middle name to chocolate because he ate so much chocolate. The phase passed, but the kimchi phase never passes. The Embassy might not like it, but I really should change my middle name to kimchi.

I'm sorry I couldn't even keep up with a weekend post once a week, but I have been eating my kimchi.

Don't stop until you tried kimchi and ice cream.^^
