FOODlog #1288: Basil Sunflower Seed Pesto Spaghetti

🌿🇮🇹 Pesto can be pricey due to the ingredients use like pine nuts and Parmegiano Reggiano cheese. I've tried different variations to this dish and it can work with a well balanced ratio of ingredients.

Here's one I made the other day that turned out really good and one that I'd be proud to serve anyone.

Pesto:

  • Basil
  • Parmegiano Reggiano
  • Sunflower seeds
  • Garlic
  • Olive Oil

I used a Malaysian cooking technique of cooking the pesto first until the oil seperate (pecah minyak) then added in the spaghetti and some of its cooking water to make a delicious creamy sauce that coats the spaghetti.

After the oil seperates, don't worry, when you add the spaghetti and some of the cooking pasta water to mix with the pesto, the sauce will emulsify together and become saucy and not oily.

Super delicious and a fun wya of experimenting with different techniques on different cuisines.
