Lately, all the typical foods of Medan (where I live) are experiencing an increase in popularity. I don't know why this trend has become something that is often talked about because this city has a myriad of delicious foods that are hard to resist. For example, yesterday everyone was talking about a type of food called Kue Lapis and Bika Ambon.
Of course, the trend is getting bigger. Same with other foods. Even now people are starting to talk about Chai Thau Kwe. This is my favorite food. Turnip cake which is famous for its distinctive taste of leaf aroma and spicy sauce with a hint of sweet. Can you imagine how it tastes?
However, it is very difficult to get turnip cake lately. The restaurants that I usually go to to enjoy this menu also often run out of ingredients. I don't know why the longing always comes with this one menu. So I tried to make it myself at home. With various recipes on social media.
This Chai Thau Kwe has two types, vegan and non-vegan. Usually non-vegan uses ebi (small shrimp with a distinctive salty taste), but it seems that without it it will also taste very good. I don't have shrimp, so I chose to make the vegan version. It's very easy to make, you just have to choose the right type of radish.
Preparing Ingredients:
I'll just make a small portion. The radish I have is only 300 grams. With the ingredients below, you can make radish cake very precisely without fail.
- 1 pcs radish (300 grams)
- 5 cloves of garlic, spring onions and fried onions
- 1 tbsp sesame oil
- 50 grams of tapioca flour and 200 grams of rice flour
- Chili sauce
- Salt and pepper
- 200 ml of water and oil for sauteing
How to make Chai Thau Kwe:
- This food has radish as the main ingredient, so you have to wash the radish thoroughly and also peel the skin. Of course we need grated radish, I use a small grater so it's not too difficult to process.
- Wash the grated radish 3 times. The aroma of radish is a bit too disturbing so it has to be removed by rinsing. Then drain.
- Thinly slice the garlic and spring onions. Prepare to be sauteed with sesame oil.
- After sauteing, then add the grated radish. Just until the radish is perfectly cooked. Add salt and pepper.
- Prepare tapioca flour and rice flour that have been mixed with 200ml of water. Then pour into the sauteed radish. Stir until thick and reduce heat.
- Prepare a steamer, add oil to the container so that it does not stick when steaming.
- Steam for 20 minutes, then remove from the steamer when cooked.
- Let stand until the dough is cold, do not cut while still warm because it will crumble. Then pan-fried until the outside is browned.
- Ready to be served with hot sauce or chili oil.
