Fritters stuffed with eggplant

A few days ago, a friend told me that vegans eat in a boring way and that all their meals look unattractive. This meant a challenge for me to invite her to my house and prepare some appetizers to show her that with creativity and love of cooking, we can make delicious and well-presented meals, even vegan recipes.

Eggplant is a very versatile vegetable, so I chose it to surprise my friend with some delicious fritters stuffed with this food.

This recipe has two parts, the dough and the eggplant filling, for which you need the following ingredients:

For the dough:

  • 1 cup corn flour
  • 2 cups of water
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar

For the filling:

  • 1 medium eggplant
  • 1 tomato
  • 1 small onion
  • 1/2 small red pepper
  • salt, oregano and pepper to taste

oil for frying.

Wash the vegetables well and cut them into small cubes. In a frying pan, preheat a little oil and sauté the onion, paprika, and tomato until a sauce is formed.

When the tomato has released its juices, add the eggplants and season with salt, pepper, or dried oregano leaves to taste. Cook over medium heat for 15 minutes. Turn off and let it cool.

In a bowl, add the water, sugar, and salt. Pour the corn flour and mix well. Let it rest for 5 minutes and knead until you get a soft and plastic dough texture.

Take a small portion and carefully flatten it into a circular shape.

Fill with the stewed eggplant and wrap the filling well. When you close the dough, carefully shape it into spheres.

Fry in oil. When well browned, remove and place on absorbent paper.

As you can see, these fritters are golden brown and crispy but soft and juicy on the inside.

You can eat them alone or add a sauce. I accompanied them with an avocado cream seasoned with lemon, oil and salt. The combination of flavors is fantastic.

And well, my friend was amazed by all that can be done with vegetables. She could see that vegan recipes are appetizing, and the visual presentation is as appealing as any other.
