I bring you this amazing Creole plum jam! I don't like to throw food away, neither waste, for that reason when I prepared my favourite juice for the Amazing Drinks community initiative I decided to reserve the fruits that were already liquefied, I usually make it this way, with sugar I keep it or else I give it to my morrocoyes to eat...

Les traigo ésta increíble mermelada de ciruelas criollas! No me gusta botar comida, tampoco desperdiciar, por esa misma razón cuando preparé mi jugo favorito para la iniciativa de la comunidad Amazing Drinks decidí reservar las frutas que estaban ya licuadas, normalmente la hago de ésta forma, con azúcar la conservo o sino se la doy a mis morrocoyes para que coman...

Ingredients

Before I put the ingredients in detail, I want to show the fruits that were liquefied from the juice: Here we have Criollo plums and carambola. For every 1000 (1kg) in sugar 700g of pulp is used, if they are thick pulps it is 600g.... For jams it is always a little more than half the percentage of sugar.

Antes de colocar los ingredientes con detalles, quiero mostrar las frutas que estaban licuadas del jugo: Aquí tenemos Ciruelas Criollas y carambola. Por cada 1000 (1kg) en azúcar se utiliza 700g de pulpa, si son pulpas espesas es 600g... Para las mermeladas siempre es un poco más de la mitad en porcentaje de azúcar.

The first thing I did was to cut some pieces of fruit so that the jam would have more texture, I helped myself with a special knife for this type of work in the kitchen.

Lo primero que hice fue cortar algunos trozos de frutas para que la mermelada tuviera mayor textura, me ayudé con un cuchillo especial para este tipo de trabajos en la cocina.

I love how the pieces of the carambola are, it is also known as "star fruit" because of the beautiful shape it appears when sliced.

Amo como son los pedazos de la carambola, también se le conoce cómo "Fruta estrella" por esa hermosa forma que aparece al rebanarla.

After cutting all the fruits to my liking, I cut the lemon in half, this is used to unify flavours and it also makes a first cooking without heat to the fruits.

Luego de cortar todas las frutas a mi gusto, el limón lo corté a la mitad, éste se utiliza para unificar sabores además que hace una primera cocción sin calor a las frutas.

I put all the ingredients into a cooking pot, first with the blended fruits,

Coloqué todos los ingredientes dentro de una olla para cocinar, primero con las frutas que estaban licuadas,

continuing with the sugar, which I mixed in all at once to integrate the ingredients.

continuando con el azúcar, ésta la mezclé de una vez para ir integrando ingredientes.

Then I placed the pieces of fruit,

Luego coloqué los trozos de frutas,

I squeezed the lemon and then let the mixture sit for 20 minutes.

Exprimí el limón y luego dejé reposar toda esa mezcla por 20 minutos.

I proceeded after those 20 minutes to place the fruits with the sugar over medium low heat, this is a slow process, here the jam starts to cook and I have to be alert to stir the pot constantly so that it doesn't burn.

Procedí pasado esos 20 minutos a colocar las frutas con el azúcar a fuego medio bajo, este es un proceso lento, aquí la mermelada comienza a cocinarse y debo estar alerta a revolver constantemente la olla para que no se queme.

It is known that the jam is ready when it takes on a different thickness and shine. The minimum cooking time for a jam is 20 minutes if it is less than half a kilo of fruit, if it is more than half a kilo it can take much longer.

Se sabe que la mermelada está lista cuando toma un espesor y brillo diferente, el tiempo de cocción mínima para una mermelada es de 20 minutos si es menos de medio kilo de fruta, si es más cantidad puede llegar a tomar mucho más tiempo.

Before packing the jam, I sterilised the glass jar I use for it. I put the jar in a pot of boiling water and left it for three minutes.

Antes de envasar la mermelada, esterilicé el frasco de vidrio que utilizo para ésta, en una olla con agua hirviendo puse el frasco y lo dejé durante tres minutos.

I continued drying the still warm container and placing the jam inside it.

Continué secando el envase aún caliente y colocando la mermelada dentro de éste.

When I close the jam, I wrap the jar in a tissue and leave it at room temperature until the next day.

Al cerrar la mermelada procedo con envolver el frasco en un pañuelo y lo dejo a temperatura ambiente hasta el día siguiente.

I always keep this jam and accompany it with biscuits or pancakes, I like it very much because it has an acidic taste, the plums together with the other fruits contrast in a great way at home... If you have the opportunity to make it sometime, do it! Don't be left wanting.

Ésta mermelada siempre la guardo y acompaño con galletas o con panquecas, me gusta mucho porque es un sabor ácido el de las ciruelas junto con las demás frutas contrasta de una gran forma en las preparaciones del hogar... Si tienen la oportunidad de hacerlo en algún momento ¡Háganlo! No se queden con las ganas.
