Qurator's: Hive Top Chef! | Mushrooms

Hello, vegan lovers today my recipe is about mushrooms which this time's contest from @qurator's hive top-chef mushrooms.

Mushroom masala Indian style

Rice with masala mushrooms.

These days heavy rains make the soil suitable for mushroom gathering while walking in the forest after the rain stops. we found different kinds of mushrooms champignon chantarelle and boletus. It was good weather for walking in the forest on Saturday we found sufficient boletus for making today's recipe.

It was 5-6 pieces of boletus small to medium size. After cleaning and taking away the dirt and bite marks they weighed around 300 grams. I sliced them. and sprinkled with 1/2 tsp salt and 1/2 lime juice.


Ingredients:
300 gram boletus mushrooms
2 tbsp mustard oil
1/2 cup of cashews
1/2 small lime
1 medium onion
2 tomatoes
1 green chili
6-7 cloves of garlic
1 tsp ginger garlic paste
some sprigs of fresh coriander.
spices:
1/2 tsp turmeric
1/2 tsp Kashmiri chili powder
2 tsp coriander powder
1 tsp garam masala.
2 bay leaves

Chopped Onion in slices, tomatoes in small pieces, and finely chopped garlic saved 2-3 cloves of garlic for later.

chili just cut in half.

I used a pressure cooker in the cooker added 2 tbsp mustard oil.

After the oil got hot added 2 bay leaves.


Then chopped onion slices garlic and chili. stir until the onion turns an almost golden color.

adding the spices turmeric, chili, garam masala, and coriander powder. and stir cook for 2 minutes on low heat.

The onion starts separating oils.

Adding 1 tsp ginger garlic paste.

Now is the time for tomatoes together with 2-3 garlic cloves.

Add 1/2 tsp salt and stir the mixture.

Adding 1/2 cup of water.

And cover the pressure -cooker and cook the mixture for 2 whistles.

After 2 whistles switch off the heat. when the cooker cools down. Open and add 1 pinch of sugar (optional)

Adding the sliced mushrooms in the cooker.

Discard the bay leaves.

Add chopped fresh coriander and cook for 5 minutes. at the end add the cashew powder. I was so impatieny forgot to take a photo.

the mushroom masala or masala mushrooms is ready for serving.

Enjoy with naan bread, chapati, or rice. I chose plain rice.
