winter salad


warm salad for winter.

Hello, food lovers greetings Today something fresh but warm salad suitable for winter weather.


3 carrots
1 sweet potato
250 grams cherry tomatoes
1 cup mixed beans cooked
1 cup chickpeas home cooked
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1 small red paprika
1 small red onion
7-8 sprigs of coriander
4-5 sprigs of mint
2 mild green chilis
2 spring onions
1/4 lemon
1 small broccoli
1 tsp mustard seeds
1 tsp cumin seed
1 tsp salt
1 tsp black pepper
1 cup aquafaba from chickpeas.
These ingredients are for salad and roasting vegetables.

Peel and cut carrots and sweet potato into long strips

Sprinkle salt, black pepper and 2 tsp olive oil on it and stir well.

Put in the oven on 180-200c for 20-25 minutes,

Meanwhile, make the salad and hummus

Ingredients:
1 cup cooked chickpeas
1 tsp black pepper
1/2 lemon
1 tsp thyme
1 tsp oregano
2 tbsp olive oil
4 garlic cloves
1/4 cup tahini
1 tsp paprika powder
1 tsp mustard oil
salt to taste

In a small pan heat mustard oil and add garlic cloves, cut into small pieces.
After the garlic starts to brown, add red chili powder and switch off the heat. In a food processor mix chickpeas, herbs, and salt, I put 1 extra green chili and olive oil fried garlic. saving the red oil from chili powder.
Then tahini.
Lemon juice and run the food processor to make the paste.

In a pan mix chickpeas and kidney beans together add salt and pepper and saved aquafaba and let it cook for around 3-4 minutes until they get nicely warm.


Cut onion and grate broccoli save 1/4 cup of onion aside.

dry roast pumpkin seeds and sunflower seeds.
roast mustard seeds and cumin seeds.

Chop cherry tomatoes in halves
and paprika in slices
coriander and mint finely chopped, spring onion nice and finely cut, 2-3 small pieces of carrots chopped, roasted seeds, roasted spices mustard, and cumin also ready to powder. for dressing season oil 2 tsp, salt and pepper to taste, maple syrup 1 tsp, and mustard cumin powder.

In a skillet add 1 tsp olive oil when the oil is warm add chopped onion. stir until the rawness disappear.
Add grated broccoli and stir until get nice warm. ( In summer you don't need to warm it but we are making winter salad try to make all ingredients warmer.)
After the broccoli gets nicely warm take it in the bowl.


Our beans are nice almost boiled mix them in the broccoli onion.
Then one by one vegetables.

Mix oil, salt pepper, maple syrup, lime juice, and mustard cumin powder.

Stir the dressing in the salad. toss some black olives on top.


Here is our dinner full of nutrients and a warm salad with hummus and roasted vegetables.

here we need to make three different things It looks complicated but does not take so much time. if you organize what to do at moment. it took me 40 minutes to prepare this menu. (the chickpeas I cook myself at home and keep them in a glass in the fridge so when i need i can use them)

I love that there are so many textures and it's fulfilling on its own. We always use rice or pasta but lately, my body is protesting against it haha, but then if I don't eat it and the rest of the dishes are not heavy enough, I'm hungry one hour later.
