Let's prepare the most delicious and nutritious corn vada.

Good evening to all my Hive friends! How are you all doing? Today, I prepared a recipe that’s perfect for adding some flavor to your tea time—delicious bada iringu vadai (corn fritters). It’s a very flavorful, easy-to-make snack. These fritters combine nutritious, satisfying ingredients like leeks, carrots, and potatoes, which add both flavor and nutritional benefits. Corn is rich in fiber, antioxidants, and essential vitamins, promoting good digestive health. Additionally, the potatoes and veggies provide carbs and essential vitamins.

Required Ingredients.....

🍀 A well-boiled medium-sized young corn pod.
🍀 A large boiled potato.
🍀 2 green chillies, finely chopped.
🍀 A few finely chopped carrots.
🍀 A few finely chopped leeks.
🍀 A little crushed garlic.
🍀 Breadcrumbs 100g.
🍀 1 1/2 teaspoon of chili powder.
🍀 2/3 teaspoon of Salt.
🍀 1/2 teaspoon of pepper.
🍀 Coconut oil for frying.

Method of making....

First, remove the corn kernels from the cob. You can do this either by hand or with a knife.

Next, place the corn kernels into a blender cup and blend them halfway, so they’re partially crushed but still have some texture.

Next, take a pan and place it on the stove. Add about one tablespoon of coconut oil and let it heat up. Once the oil is hot, add the chopped garlic and sauté until it turns slightly golden. Then, add the partially blended corn and mix everything well. Cook until everything is well combined, then remove from the stove.

Next, take a bowl and add the chopped carrots, leeks, green chilies, salt, chili powder, and pepper powder. Mix everything together well to ensure all the spices are evenly distributed with the vegetables.

Next, add 2 tablespoons of breadcrumbs to the same mixture and combine thoroughly.

Next, add the half-cooked corn and the boiled potatoes to the mixture, blending everything well until evenly combined. This will create a smooth, cohesive mixture ready for shaping into fritters.

Next, prepare the mixture as shown in the figure below and spread the breadcrumbs well.

Next, shape the mixture into fritters as shown in the following images, and then coat them thoroughly with breadcrumbs. This will help achieve a delightful crunch when frying.

Once coated, you can fry them until they turn golden brown and crispy.
