My vegetable noodles with plantain

I told my little nephew to make lunch in the morning while i was leaving the house for a business meeting, to my greatest surprise when i got home they were just starting to make it, i was confused because i don't know if am to call it lunch or dinner since it was some minutes pass 5 pm, i was so famished that i couldn't wait i had to quickly make something for us to eat then have the strength to wait for them to finish.

Noodles is seen as a fast food, i don't know if am to call a local food because of the way some prepare it or i should call it something else. This food isn't prepared occasionally because most student in the Western part of Africa especially Nigeria and Abia to be precised eat it raw while others eat just prepare it with the spice it has in it. For people like me who eat it once in a blue moon we tend to prepare it with the spice but vegetables for healthy living.

My Noodles in Vegetables with fried plantain

Ingredients

  • 120g of noodles of your choice
  • 250g of semi ripped plantain
  • 20g of scotch bonnet pepper(fresh pepper)
  • 100g of Pumpkin vegetable(Ugu) optional
  • 120g of Fresh tomatoes
  • 45ml of vegetable oil of choice
  • 75cl of water
  • 40g of onion

Step one
Putting a pot on the fire and introducing my vegetable oil then pour in my sliced plantain to fry it.

While waiting for it, i proceeded to slice all other ingredients and set aside when i was done with them.

Step two

Having brought my plantain down and making use of 45cl to was the other ingredients before slicing them i poured the remaining 30cl in a kettle boiled it and bring it. I boiled it because i used it to soak my noodles for 5 minutes before starting the cooking process.


Sieve out the water used in soaking it after 5 minutes

Step three

Putting back the oil I made used of to fry my plantain on fire, i poured in the onion, tomatoes and pepper fried well.

At this stage i have to add pour in the noodles, stir well and make sure the mix well.


I added my pumpkin leaf(ugu) last and covered for few seconds so i get the taste of the vegetable.

The noodles is ready for consumption, it took me 13 minutes to get it ready. Boiled my water for soaking the noodles for 3 minutes, soaked my noodles for 5 minutes and fried my plantain for 5 minutes. Though i was famished while prepared but i was glad it didn't take me up to 20 minutes to put something on the table.

Cent leaves is also good for noodles but this is vegetable (ugu) and l love plantain that was why it went to another level for me.

Yes some people prefer cent leaves, but I prefer pumpkin vegetable it gives me what I really want.
