Hi vegan lovers, it's great that today I'm back to bring you back to cooking delicious snacks at home. Of course, made from vegan ingredients, this snack is one of the sweet snacks that at first glance looks similar to a donut. However, this snack is one of the popular snacks from our neighboring country, Malaysia. This sweet potato-based snack is indeed very popular there, and it made me very curious to try the processed snack.
Kuih Keria
Kuih keria is a combination of sweet potatoes processed with flour and then shaped like a donut. However, there is a slight difference in this snack that relies on the sweetness of sugar water which is cooked like caramel and then spread throughout the cake. Now this cake itself is indeed a sweet snack, and of course the taste has a characteristic because part of the dough is stirred with sweet potatoes.
This was my first time trying this recipe, so there were still a lot of flaws, especially when applying the caramel, the texture of the caramel was very messy. And it made my mom laugh, she said I used too much sugar and the caramel process took too long to lift so the caramel became harder. Now this final step process itself is a bit difficult in my opinion, maybe in the next experiment I will follow my mom's tips. Haha that didn't deter me at all, I will definitely try to make better caramel in the future.
Despite the difficulty in the final process, I will still share this recipe with all of you. Here's the recipe!
200 grams sweet potato
125 grams of wheat flour
½ teaspoon baking powder
¼ teaspoon salt
80 grams of granulated sugar
45 ml water
Making Procedure
Boil sweet potatoes that have been cut into small pieces, then boil until cooked until the sweet potatoes are tender.
After cooking, immediately remove the sweet potatoes while the sweet potatoes are hot and mashed.
After the sweet potatoes are smooth, season the sweet potatoes with salt, at this stage I also stir again while mashing the sweet potatoes.
Add flour, while kneading little by little make sure everything is evenly mixed.
After the dough is mixed, divide the dough into several parts here I divided it into 10 small parts.
Then shape it like a donut, then fry it until brownish yellow.
Next, prepare sugar and water in a pan then cook until thickened.
Enter the cake that has been fried, stir everything until evenly covered. Well here the stove must remain lit on low heat. After stirring, it should be lifted immediately, don't wait for it to dry like I did.
Result
My homemade keria cake is ready to serve, it's so nice to be able to make this cake at home. Although the final result of the caramel coating was not satisfactory, I was not disappointed because it tasted very good. The cake batter is very soft, the caramelized sugar coating is just right.
The combination of sweet and savory and the softness of the cake makes it very authentic, at first glance it is almost similar to a donut, but the sweet potato flavor is still very pronounced in the dough, so this cake has a different characteristic. I think this will be my favorite cake, even if the final result is not successful I will try it again with better results.
