First Time Making Pumpkin Oat Soft Cookies

Soft cookies are sometimes the perfect accompaniment to a boring day at home. Experimenting with what's in the house always makes me happier.




Spending weekends at home is sometimes very enjoyable at home, experimenting with things that you like. I'm used to cooking and baking cakes, somehow doing it all makes me more relaxed. Maybe it's because I love it so much that everything feels very light and relaxed.

This time I tried to do it with pumpkin, I got the pumpkin from my neighbor yesterday. He harvested the pumpkin early because it was damaged by the children yesterday. He was very angry that his pumpkin was not too old, but had already been picked early by them. As a result, instead of wasting it, he distributed it to neighbors. Now that pumpkin is available, I have an idea to make healthy soft cookies at home.




Soft Cookies Pumpkin Oat

This recipe was my idea to enjoy pumpkin by baking it into soft cookies. Instead of flour, I added oats, I wanted the cookies to be crunchy and soft. To make it funnier, I shaped it with a round mold and added raisin seeds on top.

Ingredients Used

200 grams of pumpkin
100 grams of oats
2 tablespoons palm sugar
¼ teaspoon vanilla powder
¼ teaspoon baking powder
Raisins to taste




Making Procedure


Step 1


Peel the pumpkin skin, then cut the pumpkin into several parts.

Step 2


Wash thoroughly then steam the pumpkin until it is completely soft so that it is easy when pulverized. After it is perfectly cooked, crush it until the pumpkin is smooth.

Step 3


Then add powdered palm sugar and stir until evenly distributed.

Step 4


Add vanilla powder, then add baking powder and stir again until evenly distributed.

Step 5


Then, add oats and oat flour that has been ground in just one tablespoon. Add salt, stir until everything is evenly distributed.

Step 6


After the dough is ready, mold the dough with a round mold to press so that the cookies are denser later.

Step 7


Put raisins on the surface of the cake, press a little so that the raisins go deeper. Well adjust the raisins that are smaller in size because the cake is small.

Step 8


Then bake the cake for 40 minutes at 150 degrees. Note that if the cake is half dry, it means it's done.

Pumpkin oat cookies are ready to be enjoyed, the results are quite a lot 1 full pan cooked perfectly and evenly. I think this is enough for me to enjoy for a few days. However, I will store it in the refrigerator, I am afraid that in the next few days it will become stale. Because these are soft cookies so the inside is still wet and very soft so for room temperature it will not last long.

As I said, these are cookies that are not dry so the inside is soft and very tender from the texture of the lab. The most special thing is that whole oats give a crunchy texture, so it is enough to make you feel that whole oats combined with other ingredients are indeed more delicious.

What I like the most is the flavor, sweet and distinctive from the powdered palm sugar. I love using this palm sugar, it's just like regular granulated sugar. But this is definitely a healthier version of sugar, right?

For those of you who are confused about making snacks for diet I think this is the right alternative. But again, reduce the sugar and replace it with your diet sugar. Good luck with the recipe!
