Hi vegan lovers, it's a pleasure to write this recipe, which is one of the most popular traditional cakes in Indonesia. Most traditional cakes in Indonesia have a taste that is synonymous with sweet and savory because almost all cakes are made from coconut milk. Yeah we have a lot of natural coconut wealth here, so coconut milk is a quick alternative to make dishes more delicious. You know, in traditional dishes it's rare to even find animal milk. Almost everything in my area does utilize coconut milk as vegetable milk. Now this cake that I prepared has a very unique character and flavor, I am very sure that you sweet lovers will definitely like this cake.
Rainbow Layer Cake
Layer cake is one of the traditional cakes that has a sweet taste and is made in layers by steaming. Utilizing ingredients in the form of tapioca flour and also rice flour and coconut milk makes it even more delicious and has a taste with different characteristics from other cake recipes.
Actually, layer cakes have many types and are processed with a variety of different flour uses. And the most unique is made with the color of choice according to taste, many use 2 or more colors, but this time I use beautiful rainbow colors with the colors I want.
Ingredients
125 grams of rice flour
800 ml coconut milk
250 gram sugar
½ teaspoon salt
To taste vanilla powder
Actually the process of making this cake is quite time-consuming you process for approximately 2 hours to get the layers you want. But that's where the deliciousness of this dish lies, in my opinion the thinner the layers will be the more delicious. Well this recipe you can make a lot, I get 30 pieces of layer cake with a pan that I use about 20 cm. Here I'll take you through the step-by-step preparation of this cake!.
Making Procedure
Combine both flours in a larger container.
Then add saltand then put granulated sugar in a container filled with flour, well for sugar you can adjust according to your taste if you don't want the cake too sweet.
Stir the flour mixture until evenly distributed then add coconut milk while stirring so that the dough does not clot.
Leave the mixture by stirring until the sugar dissolves using a wisk, making sure there are no jagged edges.
Then divide the dough into two parts, well one dough set aside and leave it white one more dough you divide into five colors.
Then I gave the food coloring I wanted, here, I gave pink, yellow, green, blue and purple colors. Stir the dye enough until the desired color appears.
Now the first layer I took two ladles of dough around 100 ml of Ping color dough, then steamed for 3 minutes, then followed by white color with the same amount of dough steamed again for 3 minutes. Now after the white layer, I added the pink layer again, and also the next white layer.
Now I repeat each layer twice. Then continue with giving yellow color and so on. What you need to remember is that each color will be in the interval with white as a barrier.
After all the colors are finished, the last white color, I steam the end for 20 minutes so that the dough is evenly cooked. Now you have to cover the lid of the steamer with a cloth so that the water does not go down on the cake.
Serving Suggestions And Results
Well after cooking this cake must be allowed to cool before it can be removed from the pan and cut. If you insist on cutting in hot conditions the cake will crumble and have a mushy texture.
After waiting a few hours at room temperature the cake had started to cool, I took it out of the pan, and wow the cake worked perfectly. It was beautiful even though this was my first attempt at making layer cakes. Usually this layer cake is prepared by my sister, and I am just a connoisseur of this traditional cake dish. But who would have thought that the first cake I made was successful and that's something to be very happy about, right?
Cut the cake with a plastic cookie cutter knife, so you can easily cut it. Then I shared some of the pieces with my neighbors, yeah it was so much that my family and I couldn't possibly finish it all. I'm so happy that the mix of colors is so beautiful, and what I like the most is how chewy and delicious it is. Even each layer is so nice when peeling the layers.
