Purple Eggplant With Red Chili Balado Sauce

Eggplant is a vegetable that is not difficult to find in my area, the abundance of eggplant cultivation in my area makes the price of eggplant very cheap, yesterday I bought it for only IDR.4,000 per kilogram. It's very cheap, especially when eggplants are lightly loaded, you'll get so many piles of eggplants in a kilo.

Not only that now, I even started growing some eggplants in my backyard. Even though he is still small, he is very happy to have this small tree at home, especially when it bears fruit, he can harvest it at his own home.

Gardening is another hobby of mine besides cooking, because there are many plants that we always need fresh at any time, so buying them on the market takes time, so there's nothing wrong with planting some kitchen needs in the narrow yard behind the house.

Today I want to share an easy recipe for purple eggplant that you can make at home very quickly. Fresh red chilies are the main ingredient in this dish, so don't hesitate, to add lots of red chilies, when making red chili sauce for the eggplant sauce that you will cook later.

Fresh red chilies like this are not at all as spicy as you might imagine, in fact I have heard, outside Indonesia maybe one of your countries, have red chilies which have a sweet taste. Now in Indonesia it is very rare to find sweet chilies, but there are some farmers who cultivate them for the needs of certain regional communities. Well, in Indonesia, there are two types of fresh red chilies, hot and not too spicy. Non-spicy red chilies are usually larger in size. Therefore, I chose this chili to make the eggplant taste a little spicy and salty. This sauce is a great sauce to pair with purple eggplant.

Materials Used

  • 3 eggplants that have been cut
  • 10 red chilies
  • 5 bird's eye chilies
  • 1 tomato
  • 5 shallots
  • 2 cloves of garlic

Cooking Procedure

Step 1

Well first I definitely cut the eggplant, then marinate the eggplant with a teaspoon of salt and stir until evenly distributed throughout the eggplant and let stand for 5 minutes.

Step 2

Then grind the spices in a blender, as finely as possible. Then stir-fry in a pan, stir-fry the spices with a little oil.

Step 3

Then stir while sautéing the spices, and add one cup of water then wait for the water to boil.

Step 4

After the water boils, add the eggplant that has been left for 5 minutes with the salt. Cover the eggplant at this stage so that the aroma from the spices doesn't come out, and also the eggplant cooks quickly evenly.

Step 5

Then, cook until the eggplant wilts and add more salt according to taste. Now, when adding salt at the final stage, don't forget to correct the taste so it's not too salty because we've already marinated the eggplant with salt at the beginning.

Serving Suggestions

Serve the purple eggplant red chili on your plate, served with warm white rice when lunch time arrives. Because salty spicy food will be very enjoyable if enjoyed at lunch time. Well, I often cook this dish during the day with my family at home, besides being easy, the ingredients used are ingredients that are always available in my storage box.

Few tips for cooking eggplant, I strongly suggest that you don't cook eggplant too soft, because it will make the texture unattractive. And also the taste quality of the eggplant is not as delicious as usual.
