Matcha Vegan Banana Bread: A Delicious Twist on a Classic 🍌

Do you buy bananas in a bulk and before you know it, they are all brownish and super ripe? That is perfect for today's recipe! And this is my favorite way to use the bananas that I forgot at the bottom of a fruit basket 😬

Vegan banana bread is a delicious and healthier alternative to traditional banana bread that is made with eggs and dairy. This moist and flavorful banana bread is perfect for breakfast or as a snack. It is also very budget-friendly: banana bread is an affordable and economical way to use up overripe bananas that might otherwise go to waste.

The ripe bananas are mashed and mixed together with plant-based milk, coconut oil, sugar, flour and baking powder. The beauty of banana bread is that you can make it totally different each time by adding different ingredients such as berries, chocolate or spices like cinnamon or nutmeg. It is so versatile that there is a really low chance of ruining it 😁

For an added twist, you can also add mix-ins such as chocolate chips, walnuts, or dried fruit to your vegan banana bread batter. Or try making a matcha version of this classic recipe by adding matcha powder to the batter for a unique and delicious flavor as I did in this recipe! 🍵

The matcha powder provides a subtle green tea flavor to the banana bread and it makes the color of it somewhat green. This can be a nice way to add variety to your baking goods.

Vegan banana bread is a versatile recipe that can be adapted to suit your tastes and dietary needs. It's a tasty and healthy option for anyone looking for a plant-based alternative to traditional banana bread.

You will need:
I used a ~12x22cm size and 6cm deep baking tray.
• 3 well-ripened bananas
• 150 g. wheat flour
• 50 g. sugar
• 1 teaspoon of baking powder
• ¼ teaspoon of salt
• 2 tablespoons of Matcha powder
• 100 ml. plant-based milk (I used sweetened oat milk)
• 25 ml. melted coconut oil
• 1 tablespoon of apple cider vinegar
• A few drops of vanilla extract

Preparation

  1. Preheat the oven to 180°C.
  2. Peel the bananas and mash with a fork to a more or less smooth mass.

    Add melted coconut oil, apple cider vinegar, vanilla extract, milk, sugar and mix well.
  3. In a separate bowl, mix the dry ingredients - flour, baking powder, salt and Matcha powder.
  4. Pour the dry ingredients into the banana mixture and mix.
  5. Grease the baking tray with coconut or other oil (I do it simply with hands). You don't need much oil here, about a teaspoon or so to cover all the inner surface of the tray.

    Pour the dough into it and smooth the surface with a spoon/spatula.
  6. Bake in a preheated oven for about 50 minutes - you can check earlier by sticking a wooden skewer into the banana bread and if the dough doesn't stick to it and the skewer comes out clean, the bread is already baked.
  7. After removing from the oven, leave to cool for 10-20 minutes, then remove from the baking form and either leave to cool completely or cut and serve.

I always eat it alone as a dessert but you can experiment a bit and eat it with some peanut butter, jam or other sides 🍌

Yes, cinnamon is a must for me as well in basically all my sweet bakings! 😁 I didn't add it here as matcha and cinnamon didn't sound so matching but thank you for sharing, nuts or raisins also sounds great to add to any dessert, specially banana bread 🤩

Hello! That's a great idea, I have never used an airfryer so I am not the best person to ask 😁😁 But I Googled a bit and there are plenty of banana bread recipes to make in an airfryer, so I think you are good to go 😀 And as I understand the process is pretty much the same, but please Google a bit
more before listening to my unexperienced advice 😁😁
