Carrot Peanut Fry.

Wishing All My Dear Friends a Wonderful Day! Today, I’m going to share a recipe that I prepared for lunch. It’s called Carrot Peanut Fry. This is actually my first time making it, and preparing this dish was a completely new experience for me. The recipe uses powdered peanuts, which add a unique and delicious flavor to the carrots, making the fry even tastier.

Carrots are a vegetable rich in Vitamin A and packed with numerous nutrients that help fight various illnesses. Similarly, peanuts are highly nutritious and offer great health benefits. Let me share with you the steps to prepare this delightful fry.

Materials Used.

150g peeled and washed carrots.
Curry leaves.
3 cloves of garlic.
2 dry chili pods.
3 Tablespoon of Grated Coconut.
2 Tablespoon of coconut oil.
Salt as needed.
Peanut 20g.
1/2 Teaspoon of Mustard seed.
1 Teaspoon of chili powder.
1/2 Teaspoon of turmeric powder.

The cooking process as follows.

To start, take fresh carrots, wash them thoroughly, and cut them into small cube-like pieces. This will be the base for our flavorful dish.

Next, take a steamer and place the diced carrot pieces inside. Steam them well for about 10 minutes until they are tender and perfectly cooked.

Next, take a pan and add the ground peanuts. Roast them gently on low heat for a short while. Then, add the grated coconut to the same pan and roast for about 30 seconds until fragrant.

Next, transfer the roasted coconut and peanuts to a mortar and pestle. Add chopped garlic, salt, and chili powder. Pound the mixture thoroughly until it becomes well blended and smooth.

Next, take a pan and heat 2 tablespoons of coconut oil. Add mustard seeds, curry leaves, and sliced dried chili pieces. Stir the mixture well, then add a pinch of turmeric powder and mix thoroughly to combine the flavors.

Now, add the steamed carrot pieces to the pan and mix them well with the spices. Next, incorporate the cashew and coconut mixture, stirring everything together. Fry the mixture for about 3 minutes, then remove it from the heat.

Now, I have prepared the Carrot Peanut Fry. It smells amazing and tastes equally delicious. You too can prepare it this way to enhance your dining table and enjoy its delightful flavor.
