Today, for lunch, I prepared a delicious pumpkin curry—but with a twist! It’s slightly different from the usual way I make it. Pumpkin is a highly versatile and nutritious vegetable, commonly used in Sri Lankan cuisine. Naturally sweet, rich in vitamins, and packed with fiber, it is an excellent addition to a well-balanced diet. A well-prepared pumpkin curry not only enhances the taste of a meal but also brings warmth and comfort to the dining table. The combination of pumpkin chunks, aromatic spices, and creamy coconut milk creates a flavorful and healthy dish. Whether paired with rice, roti, or string hoppers, this curry makes a delightful addition to any meal. Now, let’s go step by step and see how to prepare it!

Materials Used.

350g of calamari, washed, pumpkin and cut into pieces.
2 1/3 Cup of coconut milk.
1/2 Teaspoon of turmeric powder.
About 7 cloves of garlic, peeled.
curry leaves.
1 Pandan leaves.
1 Onion.
About 3 green chilies
Salt to taste.

The cooking process as follows.

Now, let's get ready to prepare the dish. First, finely chop the onions and green chilies.

Next, take a grinding stone (or mortar and pestle) and crush the garlic and black pepper powder thoroughly.

Now, take a cooking pot and add the pumpkin pieces. Then, add curry leaves, pandan leaves, chopped green chilies, onions, turmeric powder, the prepared garlic and black pepper paste, salt, and 1 ½ cups of coconut milk. Mix everything well.

> Next, place the pot on the stove and let it cook until the coconut milk reduces slightly. Finally, add the remaining coconut milk, let it simmer for about 3 minutes, and then remove it from the heat.

So, the pumpkin curry is now ready! One of the best things about this dish is its simplicity. With just a few basic ingredients like curry leaves, onions, garlic, and turmeric, you can transform ordinary pumpkin into a flavorful and wholesome meal.
