How are you all doing today? Since my child is still on school vacation, I’m taking a bit of a breather. For today, I’ve decided to prepare a delicious treat for tea time. Kurakkan Wandu (Finger Millet Balls) is a highly nutritious snack. It’s also comparable to a dessert made with chocolate powder, making it an appealing option for many. This recipe is simple and easy to prepare, and it serves as a filling snack that keeps hunger at bay. Once you enjoy this, you won’t feel the need to eat again for a while. Kurakkan is rich in iron, calcium, and fiber, making it a fantastic addition to your diet. It’s especially suitable for those who need to regulate their blood sugar levels. For this recipe, I’ve used kurakkan flour along with a bit of Wheat flour to enhance the texture and flavor. Let’s dive in and see how this delightful snack is made!
Materials Used.
Finger millet flour 150g.
Wheat flour 125g.
1 Teaspoon of backing powder.
sugar 100g.
Grated Coconut.
1 Cup of coconut milk.
A little salt to taste.
1 Teaspoon of Cumin.
1 Cup of hot water.
Method of making....
Now, let’s get ready to prepare this delightful recipe! First, take some finger millet flour and add it to a bowl. To this, mix in wheat flour and a bit of baking powder. Combine these dry ingredients well. Next, add coconut milk to the mixture and stir until you achieve a slightly thick batter. Make sure the mixture is smooth and well-blended, ensuring there are no lumps.
Next, cover the mixture well and let it rest for about an hour.
Next, we'll prepare the coconut-infused sugar mixture. Place a pan on the stove and add about 2 tablespoons of sugar. Once it caramelizes, pour in a cup of hot water. Then, add the remaining sugar and mix well.
When the sugar syrup begins to boil, add the grated coconut. Also, add a pinch of salt. Ensure that the water in the coconut mixture does not evaporate completely. Remove it from the heat.
Next, we plan to steam the wandu (a type of food). For this, take a cup and line it with banana leaves or kanda leaves inside the cup.
Next, take the mixed kurakkan placed to the side and add the prepared coconut mixed with sugar and syrup . Then, add a little bit of salt and some sugar, and mix everything well.
Next, add the mixture into cups.
Next, we will steam this in a steamer for about 30 minutes, then remove it once done.
So, it has steamed beautifully to a nice color. This nutritious recipe pairs wonderfully with a cup of tea or coffee. I think you should try making it this way too. Well, that's all for today. Wishing you all a wonderful day!"
