There’s truly something comforting about pairing soft, warm roti with a creamy, flavorful potato curry. This beloved combination is a staple in many Sri Lankan households and is perfect for breakfast, lunch, or even dinner.
Today, I’m preparing a delicious potato curry that’s rich in spices, creamy in texture, and easy to make using simple ingredients already in your kitchen. It tastes even better with roti, and the recipe is so easy to prepare.
Let’s see how to make this flavorful dish step by step.
Ingredients...
🌺 2 potatoes.
🌺 1 cup of coconut milk.
🌺 A finely chopped onion.
🌺 2 finely chopped green chilies.
🌺 pandan leaves.
🌺 Curry leaves.
🌺 1/2 Teaspoon of curry powder.
🌺 1/2 Teaspoon of turmeric powder.
🌺 Salt as needed.
🌺 1/2 teaspoon of Fenugreek seed.
🌺 1/2 Teaspoon of Chili powder.
🌺 2 Tablespoon of Coconut oil.
The order of preparation.
First, cut the potatoes, green chilies, and add a pinch of salt.
Next, take a cooking pan and add the chopped potatoes to it. Pour about one cup of water, then add salt and turmeric powder. Cook the potatoes until they become soft and well-cooked.
Then, as the water from the potatoes starts to reduce, add chili powder, fenugreek seeds, curry powder, chopped onions, curry leaves, and pandan leaves. Mix everything well together.
Now add a tablespoon of coconut oil and a bit of thick coconut milk to the mixture. Cook for about 3 minutes, then remove from the stove.
