Banana empek-empek cake with palm sugar sauce

Hello Vegan Lovers, for friends who like bananas and cakes with a sweet taste you can try the sweet and savory banana cake recipe. I don't know the name of the banana cake that I made, because this recipe is my own creation. This recipe is inspired by the typical Palembang food, namely empek empek made from mackerel fish.

Our family likes ripe bananas that have a sweet taste, because in the garden there are always lots of bananas available, so the children sometimes get bored of eating bananas without being processed into dishes. I have often processed bananas into compote, sponge cake, godok godok cakes, lemet di and nagasari. But today I'm going to make a banana cake that's different than usual. I will put the ripe bananas into the glutinous rice flour and then boil it, after that I will give the banana stew grated coconut and palm sugar/brown sugar sauce, you can imagine how delicious this banana empek-empek cake is 😍😅

I have some wax banana combs that are ripe, wax bananas have a tiny shape like small candles so they are called wax bananas, wax bananas are bananas that can be eaten directly without being processed into cooking.

The ingredients that I use to make banana empek are :
1 wax banana comb, after I counted the number of 18 pieces (if there are no wax bananas, friends can replace them with other types of bananas)
15 tablespoons glutinous rice flour
12 tablespoons wheat flour
grated coconut from 1/2 coconut
1 teaspoon salt
150 grams palm sugar / brown sugar
1 pandan leaf (if not there can be removed)
200 mL of water to form dough
1 L of water to boil the banana empek empek

How to make banana empek empek, namely :

1.Mix flour with glutinous rice flour

2.Add water little by little until a dough is formed, then leave it for a while.

3.Next, peel the banana skin.

4.Shape the dough with an oval shape so that we can put bananas into the dough.

5.Provide 1 L of water to boil the banana empek-empek, boil the water until it boils.

6.After the water boils then add the banana empek empek, boil until the bananas are cooked, I need 15 minutes to cook the banana empek empek on medium heat. When boiling the banana empek empek, make sure the dough is completely submerged in water so that it cooks evenly.

When boiling, don't cover the pot because the cooking water spills easily.

that's why we have to stir often so the water doesn't spill.

7.After 15 minutes, I started to check if the empek empek banana was cooked. I pierced it with a stick and it looks like the banana empek empek is ripe because there is no sticky dough on the sticks.

8.Remove the banana empek empek after cooking, drain it so that the water content decreases.

9.it's time to make the gravy, boil the palm sugar with water.

10.Add salt

12.Boil the gravy until it boils and the palm sugar melts. If friends like a sweet taste, add sugar to the palm sugar solution.

The banana empek-empek is cooked and the gravy is too, it's time to enjoy the sweet and savory cake.

I love bananas but never tried to make some delicious dishes out of them.
