Cayenne pepper sauce with tempeh and ear mushrooms

Hello Vegan Lovers, for the past few days it has been raining along with cold winds, when the weather is like this, usually I will prepare dishes that taste spicy to maintain the vitality of the body. Today I will make a dish with the main ingredients of tempeh and ear mushrooms. I will make a lunch menu of cayenne pepper chili and tempeh with a sprinkling of delicious ear mushrooms.

To make this spicy dish, I use cayenne pepper and some additional spices. In order for the dish to have a refreshing spicy taste, I will also add sliced ​​ginger to the seasoning. The ear mushrooms that I bought at the supermarket are ear mushrooms with a hard texture because the mushrooms are dried, therefore before cooking, I will soak the ear mushrooms in warm water until the ear mushrooms become soft. Ear mushrooms are often used as an additional ingredient for soups, but today I will process them into dishes with a spicy taste.

The ingredients that I use to make the ear mushroom chili sauce are :

6 pieces of tempeh
100 grams of dried ear mushrooms
75 grams of cayenne pepper
1 large tomato
1 large Peking onion
5 pieces of garlic
1 piece of ginger
400 mL cooking oil
1 tablespoon salt
1 teaspoon sugar
pepper powder to taste

PREPARATION
Dried ear mushrooms have a tough texture and an unpleasant odor, so before processing them into delicious dishes, we must clean them and soak them in warm water. The trick is to put the dried ear mushrooms into a bowl, then pour warm water, soak until the ear mushrooms become soft.

After 15 minutes, the dried ear mushrooms become soft. We have to remove the cob.

Then cut the mushrooms into pieces, adjust the pieces to our taste, then wash them thoroughly with running water to get rid of the musty smell on the ear mushrooms.

Next I will cut the tempeh, we have to cut the tempeh thinly so that it dries quickly when fried.

HOW TO COOK IT
1.Peel the skin of the Peking onion, garlic and ginger.

2.Wash the Peking onions, garlic, ginger, cayenne pepper and tomatoes.

3.Thickly slice the Pekingese onion.

6.Cut the cayenne pepper into 2-3 parts, so that you don't get a stomachache, I didn't remove the stalks, but only 3-4 cayenne peppers that I didn't remove the stalks from.

7.Heat the cooking oil.

8.Fry the tempeh pieces in hot oil until brown.

9.Heat 5 tablespoons of cooking oil, then sauté Peking onions, garlic and ginger until wilted and fragrant.

10.Then add the cayenne pepper and tomatoes, stir-fry until wilted.

11.After the spices are wilted, add the fried tempeh.

12.Add the sliced ​​mushroom, stir until combined.

13.Lastly, add salt, sugar and ground pepper according to taste, I used a packet of ground pepper. Stir until everything is mixed, cook until the ear mushrooms wilt.

Solely the ginger is spicy enough for me, this dish sure keeps you warm haha. I'd love to have mushrooms, I don't know why they are so expensive here. Recently I traveled to a state in my country where they are produced and our guide explained that the production is huge, there is no need to sell it at that price, but it is treated as a luxury product to keep the price high.
