Groundnut pancake ( my special recipe)

I've had different kinds of pancakes but haven't tasted any with nut.
I wanted to prepare something different from what I've seen and that's how I came about with my groundnut pancake recipe.

I made this without sugar because I wanted to experiment the taste and I didn't want any thing to cover or overshadow the taste of my nut.

Am glad it came out nice, not sugary but moderate but next time,I will add a little amount of sugar because I love sugary things.

the pancakes was nice, moderate and most especially healthy because of the nut and less vegetable oil in it .

I think next time, I will have to try it with cashew nut and this time I will blend half of the cashew nuts to powder and add to the flour before mixing to get a better result.

The Groundnut pancakes was great and my sister loved it because she's not much of a sweet tooth like me.
Let's move over to the needed ingredients.



Ingredients needed

🌹1/2 cup of already fried Groundnut
🌹1 teaspoon of baking powder
🌹1/2 cup of Groundnut oil for frying
🌹1 teaspoon of red pepper
🌹A little quantity of curry leaves
🌹Salt to to taste

Everyone who knows how to prepare pancake will agree with me that it's an easy snack that doesn't take up to 8 minutes .
It is an an easy snack or meal perfect for everyone.



How to make

In a clean plate, add your flour, baking powder, red pepper

and salt, then mix together

Step 2

Add your already fried Groundnut in a mortar and pound it lightly,(not powder form but chewable).

Step 3

Add half of the groundnut to the flour mixture and gradually add water till you get your perfect mixture ( not too watery , just moderate but not too thick)

Step 4

Add a little amount of oil to a hot pot (1 tablespoon) , make sure it spreads round the pot, scoop a little amount of the mixture to the oil using a scooping spoon and also allow it to spread round the pot.

Step 5

add a little pounded groundnut on top of the pancake .
Flip it to the other side , when the under is ready.

Remove from heat when it's ready .
Add another tablespoon of oil and add another mixture and add another groundnut to it.

Continue until there is no mixture left.

Serve with any drinks of your choice.
