NIGERIAN MADE DELICIOUS COCOYAM PUDDIE (EKPANG NKWUKWO)

A Delicacy you can't resist.
This Delicacy is highly recommended for Nursing Mothers, Fathers and babies of eating age as well as convalescent as it highly rich in zinc, magnesium and iron also very protenous and has maximum carbohydrates.

INGREDIENTS REQUIRED

  • Cocoyam 1 kg
  • Water yam 2kg
  • Cocoyam tender leaves or pumpkin leaves
  • Periwinkle (2 milk cups)
  • Red oil 1/2 litre
  • Smoked/ Dried fish
  • Goat meat
  • Onions
  • Pepper
  • Salt
  • Seasoning cubes
  • Crayfish
  • Mixed natural spices - nutmeg, curry, ginger, garlic.

PREPARATION / RECIPES

  1. Peel the Cocoyam and Water yam , wash them properly and grate to make a fine paste.

  2. Mix the crayfish, salt, 2 pieces of seasoning cubes and some of the seasoning spices into the paste.

  3. Wash the leaves and cut into small sizes and use it for the wrapping of the yam paste in the leaves. Wrapped yam paste should be put into the cooking pot.

  4. Prepare and put your periwinkle, fish, meat, crayfish, pepper, salt, (to taste) add 2 more seasoning cubes and then the spices and red oil into the cooking pot .

  5. Place the pot on your Gas stove or arrange fire wood and get the fire 0n. Pour into the pot already boiling water to solidify the yam paste.

  6. Allow it to boil for about 15 - 20 minutes until well cooked.

Your delicious ekpang nkukwo is ready for dinner.
