We couldn't have wished for a better day to take the tour and walk out to the massive oyster farm just off the coast of Whitstable.

We met our guide outside the Whitstable Oyster Company Restaurant at 9 a.m. on a sunny and rather warm morning. We had chosen this date because of the favorable tide, but having such clear weather was an incredible bonus.
After climbing into our waders, we got a brief introduction to the farm’s history. Our guide also shared details about the two types of oysters found in Whitstable. Then, it was time to walk out to the farm, where tiny baby oysters grow into fully mature oysters.

What are the two types of oyster?
For a while we had oysters growing naturally on the beach at Ramsgate. I don't think the water quality is good enough now.
The rock oysters are the ones from the farm but there is also the Whitstable oyster - stay tuned for the full article, it's pretty interesting.
